I see recipes for Eggs Benedict all the time, but the overwhelming amount of butter usually sends me running. When I saw a recipe for a yogurt sauce with the addition of sautéed vegetables I knew I had to try it. I used kale but you could use spinach. I ate this over cloud bread and cabbage grilled cheese steaks. Both were delicious!
Ingredients:
Feta Sauce-
2 ounces feta crumbled
½ cup plain nonfat Greek yogurt
½ teaspoon paprika
Sautéed Greens
4 cups spinach or kale
2 cloves garlic minced
Juice of ½ lemon
Olive oil spray
4 large eggs
Serve on cloud bread, cabbage steaks, toast, etc…
Directions:
Mix feta, yogurt, and paprika in a small bowl. Refrigerate until ready to serve.
Add kale/spinach to a nonstick pan sprayed with olive oil spray. Cook on medium mixing often.
Add garlic and lemon juice.
Add 2 inches of water to a large saucepan. Cover and bring to a boil.
Crack eggs over a small bowl one at a time. Gently pour eggs into boiling water. Cook each egg for 2-3 minutes until whites are firm but the yolks are still runny.
Use a slotted spoon to remove eggs from the pan. Use a paper towel or dish towel to remove excess water.
To serve add sautéed greens, poached egg, and yogurt sauce over bread.

I’ll admit this dessert isn’t healthy, but it is delicious. I have made different versions of this before. I decided to try a crustless version to really bring out the chocolate chip cookie flavor.
Ingredients:
2 cups all-purpose flour
1 ½ cups light brown sugar
2 eggs
1 tablespoon baking powder
1 tablespoon vanilla extract
¼ teaspoon salt
½ cup butter softened
1 cup milk chocolate chips
1 cup semi sweet mini morsels
Magic Shell Chocolate Sauce to drizzle on top
Directions:
Preheat oven to 350 degrees. Spray a pie plate with baking spray.
Add butter to stand mixer. Beat on medium until smooth.
Add eggs and vanilla extract. Mix on medium.
Add flour, brown sugar, salt, and baking powder to a large bowl. Mix gently.
Add flour mixture to stand mixer one cup at a time. Scrape down the sides as needed.
Add milk chocolate chips and semi-sweet morsels and mix.
Transfer cookie mixture to pie plate and press down to firm.
Bake 35-40 minutes.
Let cool on wire rack.
Shake magic shell chocolate sauce and drizzle over pie.
My kids enjoy this warm from the oven (or microwaved to reheat) with chocolate chip cookie dough ice cream.

Ever since I discovered jicama this year I have been experimenting with it in different recipes and forms. These jicama hashbrowns taste amazing and are much healthier than traditional hash browns. I topped mine with green onions.
Recipe adapted from Fixate
Ingredients:
½ jicama grated and excess water squeezed out
½ teaspoon garlic powder
½ teaspoon onion powder
¼ teaspoon sea salt
¼ teaspoon ground white pepper
dash of Worcestershire sauce
1 green onion diced
Directions:
Grate jicama and squeeze out excess moisture with paper towels.
Transfer jicama to a medium bowl.
Sprinkle seasoning over jicama. Mix well.
Spray a nonstick pan with olive oil spray.
Cook on medium heat. Form a large patty with the jicama. Cook each side 3-4 minutes until lightly browned.
Drizzle with a dash or Worcestershire sauce and top with fresh green onions.
