Healthy Dark Chocolate Cheesecake No Bake Pie
Some nights I really need something sweet before bed. Okay, most nights I want some form of dessert. This cheesecake pie is light and healthy with a granola bar type crust. You can serve this as a pie or in mason jars as mini pie parfaits. This is really good with a little fresh fruit and a sprinkle of powdered sugar.

Ingredients:
Crust-
2 tablespoons dark chocolate chips
2 tablespoons coconut milk
4 large pitted Mejdool dates (1/2 cup)
1 cup old fashioned oats
1 scoop chocolate protein powder
3 tablespoons unsalted pecans
Filling:
2 cups nonfat plain Greek yogurt
1 teaspoon vanilla extract
½ cup part skim ricotta cheese
¼ cup unsweetened cocoa powder
8 packets stevia
Topping: ¼ cup dark chocolate or espresso chips
Optional: Top with fresh black berries, raspberries, strawberries, etc…
Directions:
- Heat coconut milk in a microwave safe bowl for 1 minute. Add dark chocolate chips and mix to melt chocolate.
- Add dates, oats, protein powder, and pecans to food processor. Pulse to mix.
- Pour melted chocolate chips and coconut milk in food processor. Pulse to mix.
- Transfer mixture to a pie plate and press down to firm.
- Place crust in the refrigerator while you make the filling.
- Add yogurt, vanilla, ricotta cheese, cocoa powder, and stevia to food processor. Pulse for 2 minutes until smooth.
- Spread filling over crust.
- Sprinkle chocolate chips over pie. Refrigerate for at least 2 hours to allow pie to set.
