I love the combination of sweetness and tartness in a lemon bar. This time I added freeze-dried blueberries to the crust to enhance the flavor.
Ingredients:
Crust-
1 1/4 cups all purpose flour
1/4 cup freeze-dried blueberry powder
4 tablespoons butter or coconut oil at room temperature
1/3 cup powdered sugar
Filling-
4 eggs
1 1/2 cups sugar
3/4 cups lemon juice with zest from 2-3 lemons
1 teaspoon baking powder
4 tablespoons flour
powdered sugar to sprinkle on the top after baking
Directions:
- Preheat oven to 350 degrees.
- Spray a 9×13 dish with baking spray.
- Add flour, blueberry powder, powdered sugar, and butter to a food processor. Pulse to combine.
- Press the crust into the dish.
- Bake 20 minutes.
- Meanwhile combine the eggs, sugar, and lemon juice and whisk.
- Just prior to pouring over the crust add the flour and baking powder and whisk it in.
- Gently pour the filling over the crust.
- Allow to cool completely on a wire rack.
- Sprinkle with powdered sugar and slice to enjoy!
