Blueberry Lemon Bars

I love the combination of sweetness and tartness in a lemon bar. This time I added freeze-dried blueberries to the crust to enhance the flavor.

Ingredients:

Crust-

1 1/4 cups all purpose flour

1/4 cup freeze-dried blueberry powder

4 tablespoons butter or coconut oil at room temperature

1/3 cup powdered sugar

Filling-

4 eggs

1 1/2 cups sugar

3/4 cups lemon juice with zest from 2-3 lemons

1 teaspoon baking powder

4 tablespoons flour

powdered sugar to sprinkle on the top after baking

Directions:

  1. Preheat oven to 350 degrees.
  2. Spray a 9×13 dish with baking spray.
  3. Add flour, blueberry powder, powdered sugar, and butter to a food processor. Pulse to combine.
  4. Press the crust into the dish.
  5. Bake 20 minutes.
  6. Meanwhile combine the eggs, sugar, and lemon juice and whisk.
  7. Just prior to pouring over the crust add the flour and baking powder and whisk it in.
  8. Gently pour the filling over the crust.
  9. Allow to cool completely on a wire rack.
  10. Sprinkle with powdered sugar and slice to enjoy!
