Grilled steaks are always a favorite of my kids. These steaks are marinated and topped with a sweet mango chimichurri.

Ingredients:
Mango Chimichurri-
½ cup fresh mint leaves
3 cloves garlic
2 tablespoons fresh cilantro
1 tablespoon fresh parsley
½ cup extra virgin olive oil
¼ cup red wine vinegar
2 tablespoons honey
2 teaspoons paprika
1 ripe mango
Steak-
3 1 ½ inch thick well marbled rib eye steaks
Directions:
Mango Chimichurri- Add mint, garlic, cilantro, parsley, olive oil, red wine vinegar, honey, paprika, and mango to a food processor. Pulse to create a smooth sauce.
Pour some chimichurri and spread on the bottom of a large, covered dish. Place the steaks on the sauce. Pour some sauce on the steaks and spread to coat. Marinated in the refrigerator for at least 30 minutes preferably a few hours.
Remove the steak from the refrigerator at least 30 minutes before cooking.
Preheat a grill to high heat. Grill the steak for at least 5 minutes per side. Let the steak rest 5 minutes before slicing.
Top steak with mango chimichurri.

I love the flavor of tahini just as much as I love peanut butter. I lightened up this pie by using yogurt and reduced fat graham crackers. I topped my pie with Peanut Lover’s Reese’s, but any variety of Reese’s would work.
Ingredients:
Crust-
1 sleeve reduced fat graham crackers
¼ cup tahini
Filling-
1 ½ cups tahini
2/3 cup nonfat vanilla Greek yogurt
1 cup heavy cream
½ cup powdered sugar
½ teaspoon cinnamon
1 teaspoon vanilla extract
Topping:
3-4 Reese’s chopped
Directions:
Add graham crackers to food processor. Pulse to chop to a fine crumb.
Add tahini and pulse to mix.
Use a spatula to transfer graham cracker mixture to a pie crust. Press down to firm.
Place crust in the refrigerator while you make the filling.
Add tahini and yogurt to a stand mixer with paddle attachment. Mix on medium to combine.
Add heavy cream, vanilla extract, powdered sugar, and cinnamon. Mix on medium to combine.
Use a spatula to transfer filling to the pie. Gently spread out the filling.
Top pie with diced Reese’s.
Refrigerate pie to allow it to set for at least 4 hours.
