Tuscan Roasted Lemon Potatoes

I could eat roasted potatoes almost every day and this recipe is exceptionally delicious. 

Ingredients:

2 pounds gold potatoes unpeeled and diced into 1-inch pieces

4 cloves garlic smashed

2-4 branches fresh rosemary

½ lemon cut in half through the stem and thinly sliced crosswise

3 tablespoons olive oil

Salt and pepper to taste

Directions:

  1. Preheat the oven to 375 degrees. Line a baking sheet with aluminum foil.
  2. Toss potatoes in a large bowl with olive oil, garlic, lemon juice, salt, and pepper. 
  3. Spread potatoes out in an even layer on the baking sheet with rosemary branches.  
  4. Roast for 50-60 minutes turning the potatoes every 20 minutes.
  5. Discard the rosemary branches and serve.

<strong>Grilled Steak with Mango Chimichurri</strong>

Grilled Steak with Mango Chimichurri

Wow! This was so delicious I practically licked my plate clean.  The mango chimichurri is so good you will want to eat it by the spoonful and a nice grilled steak always makes me smile.  I used New York strips, but you can use any cut of steak you like. The herbs I used came fresh from my garden, but you can buy them if you don’t have any growing on hand.

Ingredients:

Steak-

4 New York strip steaks

Olive oil

Salt and pepper

Mango Chimichurri-

1 cup fresh parsley leaves

1 cup fresh cilantro leaves

½ cup fresh mint leaves

2 garlic cloves minced

¼ cup red wine vinegar

2 tablespoons honey

1 teaspoon paprika

½ – ¾ cup olive oil

1 mango diced

Directions:

  1. Remove steak from refrigerator at least 20 minutes prior to grilling.
  2. Rub steaks with olive oil on both sides.  Salt and pepper to taste.
  3. Preheat grill to high heat.
  4. Add parsley, cilantro, mint, garlic, red wine vinegar, ½ cup olive oil, honey, and paprika to a food processor.  Pulse to mix.  Add more olive oil if needed.
  5. Transfer to a medium bowl and fold in diced mango.
  6. Grill steaks for 3-5 minutes per side.  Let steaks rest for 5 minutes before serving.
  7. Top steaks with mango chimichurri. 
  8. Enjoy!

Healthy and delicious! I always start my day with a muffin before I work out and these were a treat I couldn’t wait to wake up and enjoy.  Ingredients: ½  lemon zested ½ cup sugar or truvia 1 cup almond flour ½ cup whole wheat 

<strong>Strawberry Poke Cake</strong>

Strawberry Poke Cake

For Mother’s Day this year I was craving strawberry.  We normally go strawberry picking, but a cold spring with constant rain has prevented that.  This cake is delicious and a dessert kids will enjoy helping with.

Ingredients:

Cake-

2 sticks unsalted butter at room temperature

2 cups sugar

3 large eggs

1 ¼ cups buttermilk well shaken

2 teaspoons vanilla extract

2 ½ cups all-purpose flour

½ teaspoon baking powder

½ teaspoon baking soda

½ teaspoon salt

1 3 ounce box strawberry gelatin

Strawberry Topping-

2 pounds strawberries diced

3 packets truvia/monk fruit or 3 tablespoons sugar

Whipped Cream Topping-

2 cups heavy cream

1 tablespoon sugar

2 teaspoons vanilla extract

Directions:

Cake-

  1. Preheat oven to 350 degrees and spray a 9×13 baking dish with baking spray.
  2. Beat the sugar and butter in a stand mixer at medium speed until light and fluffy at least 5 minutes, scraping down the sides as needed. 
  3. Add the eggs one at a time.
  4. Whisk the flour, baking soda, baking powder, and salt in a medium bowl.
  5. Whisk the buttermilk and vanilla extract.
  6. Alternate adding the flour and buttermilk mixtures in thirds on a low speed.
  7. Spread batter out in an even layer in the cake pan.
  8. Bake 30-35 minutes until a toothpick inserted in the center comes out clean.
  9. Let cool on a wire rack for at least 30 minutes. Then poke holes in the cake using a spatula, icing tip, etc..
  10. Then pour 1 cup water over gelatin mixture and mix for at least 2 minutes until powder dissolves.  Add ½ cup cold water and mix. Pour strawberry mixture over the cake.
  11. Refrigerate cake for 2 hours. Place mixing bowl in the fridge to cool.
  12. While cake is setting in the fridge add diced strawberries and sugar to a bowl.  Stir together and store in the refrigerator.
  13.   Add heavy cream, vanilla extract, and sugar to the cooled bowl.  Whisk until fluffy. Spread over the cake.
  14. Top cake with sweetened strawberries.
  15. Enjoy!
