I think peanut butter goes with just about everything.  Peanut butter and blueberry is a wonderful combination when you need a sweet and crunchy snack packed full of protein to fuel your busy days.

Ingredients:

½ cup old fashioned oats

1 scoop peanut butter powder

1 scoop vanilla protein powder

½ cup dried banana chips

½ cup cashews

1 tablespoon flax seeds

6 dried dates

½ cup pure or light maple syrup

2 tablespoons natural or reduced fat peanut butter

¼ cup dried blueberries

Directions:

  1. Add oats, cashews, banana chips, and flax seeds to food processor.  Pulse to chop and mix.
  2. Add the dates and peanut butter.  Pulse to chop the dates and mix in the peanut butter.
  3. Add the protein powder, powdered peanut butter, and maple syrup.  Pulse to mix.
  4. Add the dried blue berries.  Pulse to mix.
  5. If the mixture is too dry you can add more peanut butter, syrup, or dates.
  6. Use an ice cream scoop or cookie scooper to form balls. If the mixture is too sticky refrigerate for 15 minutes and then try again.
  7. Store the balls in an air-tight container.
  8. Enjoy!

Veggie Wraps with Sweet Potato Hummus

I fell in love with the flavor of hummus and especially tahini over the course of the last year.  I make a carrot hummus that I use as a vegetable dip all the time.  This was my first time making sweet potato hummus, but I had added different varieties of hummus to wraps in the past.  Feel free to adjust this recipe using vegetables you like.

Recipe adapted from Food Network

Ingredients:

Sweet Potato Hummus-

1 large sweet potato

1 15 ounce can chick peas rinsed and drained

3 tablespoons lemon juice, zest from 1 lemon

3 tablespoons tahini

3 tablespoons extra-virgin olive oil

1 garlic clove

1 teaspoon salt

Wraps-

Spinach or whole wheat tortilla

Spinach

Tomatoes sliced

English cucumber sliced

Bell pepper sliced

Matchstick carrots

Sweet onion sliced

Directions:

Sweet Potato Hummus

  1. Pierce the sweet potatoes all over with a fork.  Microwave for 8 minutes flipping over halfway through. Let cool.
  2. Add chickpeas, tahini, lemon zest and juice, olive oil, garlic, and salt to a food processor.  Pulse to mix.
  3. Peel the sweet potato and add the sweet potato to the food processor.  Pulse to mix.  Add olive oil if needed to thin.
  4. Store hummus in an air-tight container for up to 2 weeks.  This is an excellent vegetable dip if you have leftover hummus.

Wraps-

  1. Spread hummus on tortilla.  Top with spinach, tomatoes, peppers, cucumber, carrots, and onion.  Roll up like a burrito.
  2. Enjoy!
  3. Optional: Add sliced ham, turkey, chicken, etc… if you want more protein.

Strawberry Carrot Muffins

Strawberries always make me smile.  These strawberry carrot muffins will help you greet your morning with a smile too. 

Ingredients:

1 cup cooked diced carrots

1 cup diced strawberries, plus a few sliced strawberries for topping

2 large eggs

½ cup unsweetened applesauce

1 cup whole wheat flour

1 cup almond flour

1 scoop vanilla protein powder

¼ cup freeze dried strawberry powder

1 teaspoon baking soda

1 teaspoon salt

1 teaspoon cinnamon

1 teaspoon ginger

Directions:

  1. Preheat oven to 350 degrees.  Line a muffin tin with liners or spray with nonstick baking spray.
  2. Peel and roughly chop 2-3 large carrots.  Boil for 10 minutes.  Then transfer to a food processor and dice. 
  3. In a large bowl add flours, protein powder, baking soda, salt, strawberry powder, ginger, and cinnamon and mix.
  4. Add carrots, eggs, and applesauce.  Mix to combine.
  5. Use a large cookie scooper or measuring cup to fill muffin tins.
  6. Slice strawberries and press on the top of the muffins.
  7. Bake for 20 minutes.
  8. Let cool on a wire rack for at least 10 minutes before removing muffins from tins.
  9. Store in an air-tight container.
