Cheesy Baked Mashed Potatoes My children devour mashed potatoes.  This recipe used a mixture of golden and russet potatoes mixed with mozzarella cheese and parmesan cheese.  The result is a creamy and delicious baked potato dish that we absolutely devoured.  Ingredients:  3 russet potatoes peeled

What’s better than lasagna?  How about a lasagna with a BBQ flair with a barbecue sauce based sauce and melted cheddar cheese.   Ingredients: 1 pound lean ground beef 1 bell pepper diced ½ onion diced 1 cup barbecue sauce 1 cup beef broth ½ cup 

French Onion Meatloaf

French Onion Meatloaf

Meatloafs have become one of my favorite prep ahead of time dinner staples.  To keep things interesting I am always trying different flavor profiles.  This meatloaf is packed with flavor and topped with crunchy fried onions. 

Ingredients:

1 pound lean ground beef

½ onion diced

2 garlic cloves minced

1 bell pepper diced

1 package onion soup mix

1 tablespoon worcestershire sauce 

1 cup old fashioned oats

½ cup shredded parmesan cheese

1 cup shredded cheese (I used a cheddar blend)

1 egg beaten

Crunchy fried onions 

Directions:

  1. Saute onions and pepper over medium heat until soft.  Add garlic and saute for an additional minute. 
  2. Add ground beef, onion mixture, soup mixture, worcestershire sauce, parmesan cheese, and oats to a large bowl.  Gently mash together. 
  3. Add the egg mixture and mix it in. 
  4. Press the mixture into the base of a bread pan. 
  5. Top with shredded cheese. 
  6. Cover with aluminum foil and bake for 50 minutes at 350 degrees. 
  7. Remove aluminum foil and top with fried onions.  Bake for an additional ten minutes.  
  8. Allow meat to cool for 5 minutes before slicing. 
  9. Enjoy!

I love peanut butter and this pie is full of peanut butter flavor with a light and creamy texture.   Ingredients: 1 graham cracker crust ¼ cup powdered sugar ½ cup peanut butter 1 5 oz box of instant vanilla pudding 3 cups of nonfat milk

These cookies are similar to chocolate chip cookies, but instead of chocolate chips they feature pumpkin spice chips with a touch of pumpkin spice seasoning.  These are the perfect fall cookie! Ingredients: 2 sticks unsalted butter at room temperature 3 cups all purpose flour ½ 

Cranberry Pumpkin Muffins

Cranberry Pumpkin Muffins

Cranberry pumpkin muffins are one of my favorite muffins.  The tartness from the cranberries with the delicious pumpkin flavor mixes to make a flavor profile I crave all year.  

Ingredients: 

1 ½ cups all purpose flour

1 cup vanilla protein powder

1 can pumpkin puree

½ cup brown sugar

½ cup granulated sugar

2 eggs at room temperature

1 teaspoon salt

1 teaspoon baking powder

½ teaspoon baking soda

2 teaspoons pumpkin pie spice

1 tablespoon vanilla extract

1 cup fresh cranberries plus more for garnish

1-2 tablespoons sugar in the raw or granulated sugar

Directions:

  1. Preheat oven to 350 and spray muffin cups with cooking spray.
  2. Add pumpkin puree and sugars to a stand mixer.  Mix on medium speed until combined.
  3. Add eggs one at a time and mix in. Add vanilla and extract and mix in. 
  4. Whisk together flour, protein powder, baking soda, baking powder, salt, and pumpkin pie spice in a separate bowl. 
  5. Gradually add dry ingredients one cup at a time scraping down the bowl as needed.
  6. Add cranberries and mix in. 
  7. Use a large cookie scoop to fill muffin tins. 
  8. Press down 2-4 additional cranberries in the top of each muffin. 
  9. Sprinkle sugar on top of each muffin. 
  10. Bake for 20-25 minutes or until muffins are set in the center. 
  11. Let muffins cool for 5 minutes before removing from tins to cool completely on a wire rack. 
  12. Store in an airtight container. 
  13. Enjoy!!
