Snickerdoodles

I hadn’t made these in a long time, but when my son requested them I thought why not. The first batch disappeared in 24 hours, so I had to make more.
INGREDIENTS:
2 cups all purpose flour
1/2 cup vanilla protein powder
1/2 cup granulated sugar
1/2 cup light brown sugar
1 stick of unsalted butter at room temperature
1 teaspoon ground cinnamon
1 teaspoon cream of tartar
1 teaspoon baking powder
1/2 teaspoon baking soda
1 teaspoon salt
1 tablespoon vanilla extract
2 eggs at room temperature
1 teaspoon and 1/2 cup granulated sugar to dip cookie dough balls in
DIRECTIONS:
- Line a baking sheet with parchment paper and preheat oven to 350 degrees.
- Beat butter and sugars in a stand mixer until soft and fluffy.
- Add eggs and vanilla extract to the stand mixer.
- Whisk flour, protein powder, baking powder, baking soda, salt, cinnamon, and cream of tartar. Add the flour mixture to the stand mixer one half cup at a time.
- Use a medium cookie scooper to form balls.
- Roll each cookie dough ball in the cinnamon sugar mixture to coat.
- Place on a baking sheet at least 2 inches apart.
- Bake 10-11 minutes. Allow to set on baking sheet before transferring to a wire rack to cool completely.
- Store in an air tight container.
