Snickerdoodles

I hadn’t made these in a long time, but when my son requested them I thought why not. The first batch disappeared in 24 hours, so I had to make more.

INGREDIENTS:

2 cups all purpose flour

1/2 cup vanilla protein powder

1/2 cup granulated sugar

1/2 cup light brown sugar

1 stick of unsalted butter at room temperature

1 teaspoon ground cinnamon

1 teaspoon cream of tartar

1 teaspoon baking powder

1/2 teaspoon baking soda

1 teaspoon salt

1 tablespoon vanilla extract

2 eggs at room temperature

1 teaspoon and 1/2 cup granulated sugar to dip cookie dough balls in

DIRECTIONS:

  1. Line a baking sheet with parchment paper and preheat oven to 350 degrees.
  2. Beat butter and sugars in a stand mixer until soft and fluffy.
  3. Add eggs and vanilla extract to the stand mixer.
  4. Whisk flour, protein powder, baking powder, baking soda, salt, cinnamon, and cream of tartar. Add the flour mixture to the stand mixer one half cup at a time.
  5. Use a medium cookie scooper to form balls.
  6. Roll each cookie dough ball in the cinnamon sugar mixture to coat.
  7. Place on a baking sheet at least 2 inches apart.
  8. Bake 10-11 minutes. Allow to set on baking sheet before transferring to a wire rack to cool completely.
  9. Store in an air tight container.
