This is a lightened up version of a blondie, that still tastes great. INGREDIENTS: 1/2 cup peanut butter 1/2 cup plain nonfat Greek yogurt 1/4 cup lite maple syrup 1/4 cup unsweetened applesauce 1 teaspoon vanilla extract 1/2 teaspoon baking powder 1/2 teaspoon sea salt

These are a tasty and healthy way to start the day. INGREDIENTS: 1 can pumpkin puree 2 large eggs at room temperature 1/2 cup fat free vanilla Greek yogurt 1/2 cup light brown sugar 1 teaspoon vanilla extract 1 teaspoon salt 1 teaspoon baking powder 

Cheesy Bacon Ranch Chicken Sandwiches

Cheesy Bacon Ranch Chicken Sandwiches

This was an easy meal to prep that left almost zero leftovers.

INGREDIENTS:

2 pounds chicken breasts

1 bell pepper diced

1/2 onion diced

2 tablespoons ranch seasoning

8 ounces reduced fat cream cheese

1/2 cup shredded Cheddar

1/2 cup chicken broth

1 pound thick bacon cut into pieces

DIRECTIONS:

  1. Spray crockpot with olive oil spray.
  2. Place chicken breasts in crockpot and sprinkle with ranch seasoning.
  3. Arrange peppers and onions on top of the chicken.
  4. Pour chicken broth over peppers and chicken.
  5. Cook on low for 7 hours.
  6. Shred the chicken.
  7. Cut cream cheese into cubes/strips and place over chicken. Sprinkle cheddar cheese over mixture. Continue to cook for an hour.
  8. Meanwhile fry the bacon and let it cool on a paper towel to crisp.
  9. Shred again to mix cheese with the chicken.
  10. Serve on buns.
  11. Sprinkle bacon over the chicken.
  12. Enjoy!!
