Crustless Chocolate Chip Cookie Pie

Crustless Chocolate Chip Cookie Pie

I’ll admit this dessert isn’t healthy, but it is delicious.  I have made different versions of this before. I decided to try a crustless version to really bring out the chocolate chip cookie flavor.

Ingredients:

2 cups all-purpose flour

1 ½ cups light brown sugar

2 eggs

1 tablespoon baking powder

1 tablespoon vanilla extract

¼ teaspoon salt

½ cup butter softened

1 cup milk chocolate chips

1 cup semi sweet mini morsels

Magic Shell Chocolate Sauce to drizzle on top

Directions:

  1. Preheat oven to 350 degrees.  Spray a pie plate with baking spray.
  2. Add butter to stand mixer.  Beat on medium until smooth.
  3. Add eggs and vanilla extract. Mix on medium.
  4. Add flour, brown sugar, salt, and baking powder to a large bowl.  Mix gently.
  5. Add flour mixture to stand mixer one cup at a time.  Scrape down the sides as needed.
  6. Add milk chocolate chips and semi-sweet morsels and mix.
  7. Transfer cookie mixture to pie plate and press down to firm.
  8. Bake 35-40 minutes.
  9. Let cool on wire rack.
  10. Shake magic shell chocolate sauce and drizzle over pie.
  11. My kids enjoy this warm from the oven (or microwaved to reheat) with chocolate chip cookie dough ice cream.
