Zucchini Chocolate Cake

This cake is so incredibly rich and decadent! The original recipe I found labeled these as brownies, but it had the texture of a cake. My incredibly picky son ate this cake (not knowing about the zucchini) and said it was delicious.
INGREDIENTS:
Cake-
2 cups shredded zucchini (undrained)
1/2 cup unsweetened applesauce
1 1/2 cups white sugar
2 teaspoons vanilla extract
1 1/2 cups all purpose flour
1/2 cup chocolate protien powder
2/3 cup unsweetened cocoa powder
1 1/2 teaspoons baking powder
1 teaspoon salt
1 cup chocolate chips (I used half milk chocolate and half dark chocolate)
Frosting-
1/2 cup unsalted butter at room temperature
1/2 cup unsweetened cocoa powder
1/4-1/3 cup milk
1 teaspoon vanilla extract
Sprinkles if desired
DIRECTIONS:
Cake-
- Pre-heat oven to 350 and spray a 9×13 baking sheet with nonstick spray.
- Mix sugar, applesauce, and vanilla extract in a stand mixer on medium.
- Whisk together- flour, chocolate protein powder, baking soda, and salt in a medium bowl.
- Add the dry ingredients to the wet ingredients mixing on low. Scrape down the sides as needed.
- Add the shredded zucchini mixing on medium.
- Add the chocolate chips and mix in.
- Spread out the cake mixture in the baking sheet.
- Bake 30 minutes or until cake is just done.
- Let cake cool on a wire rack. Then make the frosting.
Frosting-
- Cream butter in a stand mixer using the whisk mixing on medium for 3-5 minutes.
- Add half the powdered sugar mixing on low.
- Add the milk and vanilla extract. Whisk in.
- Add the cocoa powder. Whisk on low.
- Gradually add remaining powdered sugar until you reach the desired consistency. Add more milk if needed.
- Pipe or spread frosting on the cooled cake.
- Enjoy!
