Zucchini Chocolate Cake

This cake is so incredibly rich and decadent! The original recipe I found labeled these as brownies, but it had the texture of a cake. My incredibly picky son ate this cake (not knowing about the zucchini) and said it was delicious.

INGREDIENTS:

Cake-

2 cups shredded zucchini (undrained)

1/2 cup unsweetened applesauce

1 1/2 cups white sugar

2 teaspoons vanilla extract

1 1/2 cups all purpose flour

1/2 cup chocolate protien powder

2/3 cup unsweetened cocoa powder

1 1/2 teaspoons baking powder

1 teaspoon salt

1 cup chocolate chips (I used half milk chocolate and half dark chocolate)

Frosting-

1/2 cup unsalted butter at room temperature

1/2 cup unsweetened cocoa powder

1/4-1/3 cup milk

1 teaspoon vanilla extract

Sprinkles if desired

DIRECTIONS:

Cake-

  1. Pre-heat oven to 350 and spray a 9×13 baking sheet with nonstick spray.
  2. Mix sugar, applesauce, and vanilla extract in a stand mixer on medium.
  3. Whisk together- flour, chocolate protein powder, baking soda, and salt in a medium bowl.
  4. Add the dry ingredients to the wet ingredients mixing on low. Scrape down the sides as needed.
  5. Add the shredded zucchini mixing on medium.
  6. Add the chocolate chips and mix in.
  7. Spread out the cake mixture in the baking sheet.
  8. Bake 30 minutes or until cake is just done.
  9. Let cake cool on a wire rack. Then make the frosting.

Frosting-

  1. Cream butter in a stand mixer using the whisk mixing on medium for 3-5 minutes.
  2. Add half the powdered sugar mixing on low.
  3. Add the milk and vanilla extract. Whisk in.
  4. Add the cocoa powder. Whisk on low.
  5. Gradually add remaining powdered sugar until you reach the desired consistency. Add more milk if needed.
  6. Pipe or spread frosting on the cooled cake.
  7. Enjoy!
