Coming from Maryland my family loves crabs and crab cakes. These crab filled muffins feature the flavors of the cheddar bay biscuits at Red Lobster and are filled with a delicious crab mixture.
Ingredients:
1 box Red Lobster Cheddar Biscuit mix
3/4 cup water
1/2 cup shredded cheddar cheese
1 pound lump crab meat
1/2 teaspoon Old Bay or other seafood seasoning
1/2 cup plain nonfat Greek yogurt
3 tablespoons Dijon mustard
Directions:
- Preheat oven to 350 degrees.
- Mix crab meat, Old Bay, mustard, and yogurt in a medium bowl.
- Gently combine biscuit mix, water, and shredded cheese in a separate bowl.
- Use a small cookie scooper to place a dollop of biscuit mixture in each muffin tin.
- Dip a large spoon in flour and press down on the biscuit mix to cover the base of each muffin tin.
- Use a medium cookie scooper and place the crab mixture over the biscuit mix.
- Again use a small cookie scooper and place another ball of biscuit dough over the crab mixture.
- Use the spoon to press down and spread out the biscuit mixture.
- Bake for 15-17 minutes until biscuits are cooked through.
- Let rest for a few minutes before serving.
