Anytime I have leftover ham after a big holiday meal I always make this casserole.  It doesn’t take long to prepare and tastes like a big ham omelet. Recipe adapted from Food Network Ingredients- 2-3 large carrots peeled and sliced into rounds 1-2 russet potatoes

Key lime pie in an energy ball! These may not taste exactly like key lime pie, but the flavors are close.  If you like coconut and lime then you will enjoy these tasty energy balls.

Ingredients:

1/2 cup cashews

1/2 cup almonds

1 cup pitted and dried dates (4 large Mejdool dates)

1 scoop vanilla protein powder

1 tablespoon flax seeds

1/4 cup shredded unsweetened coconut

1 lime, zested & juiced 

Directions:

  1. Add all ingredients to food processor.
  2. Process on high until a crumbly and sticky mixture form.
  3. Use an ice cream scooper to form balls. If the balls do not stick together add a little more lime juice or refrigerate the mixture for 15 minutes and then try again. 
  4. This made 16 energy balls for me.
  5. Store in an air-tight container in the refrigerator.

April Fool’s Day Hamburger and Fries

I had so much fun tricking my family with my April Fool’s Lasagna that I had to keep the fun going.  I served this for lunch and my boys absolutely loved it.

Ingredients-

6 vanilla and chocolate ice cream sandwiches

4 slices pound cake

Strawberry jam

Directions-

Hamburger Patties-

  1. Pulse the ice cream sandwiches in a food processor until they resemble hamburger meat.
  2. Use a large cookie scooper to form balls.
  3. Place the balls on a parchment lined baking sheet. 
  4. Smush the balls slightly to resemble hamburger patties.
  5. Freeze for 2 hours to harden.
  6. Remove from freezer when ready to serve and use a large spatula to transfer to plates.
  7. Note: My children usually eat hamburger patties without buns.  If you want to use buns you could use the pound cake as buns, use sweet Hawaiian rolls, or make a cookie type bun.

French Fries-

  1. Preheat the oven to 350 degrees. Line a small baking sheet with aluminum foil.
  2. Cut the slices of pound cake into ½ inch slices.
  3. Spread the slices out on the baking sheet. Spray with butter spray or drizzle with melted butter.
  4. Bake for 5-8 minutes.
  5. Serve with strawberry jam as ketchup.

Everything Bagel Veggie Scramble

I am always sneaking vegetables into every dish imaginable.  This is a super easy scramble that is full of flavor.  If you don’t have Everything Bagel seasoning I would highly suggest you buy some. Feel free to mix and match using vegetables you have on hand.

Note: Double ingredients if cooking for more than 1 person.

Ingredients

1 tablespoon Everything Bagel seasoning

½ cup chopped tomato

½ cup bell pepper chopped

1 green onion chopped

¼ cup shredded cheese

2 eggs

Directions:

  1. Spray a nonstick pan with olive oil spray.
  2. Sauté vegetables over medium low heat for 5 minutes to soften.  Sprinkle with seasoning.
  3. Add eggs to pan.  Whisk to scramble.
  4. Cook until eggs are set.
  5. Enjoy!
