Anytime I have leftover spiral ham I am always looking for tasty and innovative ways to use the leftovers.  I love ham wraps, but I was looking for something different.  When I saw this recipe I wasn’t sure about the combination of ingredients; however, I decided to try it anyway.  Well let me tell you my entire family raved about how delicious this ham salad was. 

Recipe adapted from Food Network

Ingredients-

½ cup plain nonfat Greek yogurt

1 teaspoon Dijon mustard

1 tablespoon buffalo sauce

1 teaspoon dried dill

¼ teaspoon pepper

2 cups cooked ham cut into cubes

1 hard boiled egg peeled and chopped

1 stalk celery chopped

1 tablespoon sweet relish

Serve on: wraps, biscuits, bread, buns, or over a salad

Directions:

  1. Add all ingredients to a large bowl.  Mix gently to combine.
  2. Serve on a wrap over spinach or on a fresh baked biscuit.
  3. Store any leftovers if there are any in an air tight container in the refrigerator.

Anytime I have leftover ham after a big holiday meal I always make this casserole.  It doesn’t take long to prepare and tastes like a big ham omelet. Recipe adapted from Food Network Ingredients- 2-3 large carrots peeled and sliced into rounds 1-2 russet potatoes

Key lime pie in an energy ball! These may not taste exactly like key lime pie, but the flavors are close.  If you like coconut and lime then you will enjoy these tasty energy balls. Ingredients: 1/2 cup cashews 1/2 cup almonds 1 cup pitted and dried dates 

Tex-Mex Chicken Parmesan

Tex-Mex Chicken Parmesan

Cheesy, crunchy, spicy chicken bathed in salsa! This is a dinner that is sure to vanish in the blink of an eye.  You can enhance the spice or keep it mild depending on your preferences.

Recipe adapted from Food Network

Ingredients:

8 chicken tenders (or boneless chicken breasts cut into strips)

1 bell pepper cut into strips

½ onion cut into strips

1 15 ounce jar of salsa

2 cups tortilla chips

1-2 cups shredded cheese (Pepper Jack, Monterrey Jack, Mexican blend, etc…)

2 tablespoons fresh cilantro

¼ teaspoon chili powder or 1 teaspoon chipotle lime seasoning blend

Optional: plain nonfat Greek yogurt, avocado, guacamole, etc…

Directions:

  1. Spray an 9×13 dish with olive oil spray. Preheat the oven to 400 degrees.
  2. Spray a nonstick pan with olive oil spray.  Sauté the chicken over medium heat until lightly browned on both sides.  Sprinkle chili powder or other seasoning over the chicken.
  3. Spray another nonstick pan with olive oil spray. Sauté the pepper and onion over medium heat for 5 minutes to soften.
  4. Spread the chicken out in the 9×13 pan.  Spread the peppers and onions out over the chicken.  Pour the salsa over the chicken and peppers.
  5. Crush the tortilla chips in a food processor until they are in small pieces but not crumbs.
  6. Sprinkle the tortilla chips over the salsa.
  7. Top with shredded cheese.
  8. If baking now, bake for 25-30 minutes.  If prepping a head of time and refrigerating bake for 45 minutes to allow dish to warm through.
  9. Top with fresh cilantro. 
  10. Serve warm.  Top with plain nonfat Greek yogurt, avocado, guacamole, etc…

I had so much fun tricking my family with my April Fool’s Lasagna that I had to keep the fun going.  I served this for lunch and my boys absolutely loved it. Ingredients- 6 vanilla and chocolate ice cream sandwiches 4 slices pound cake Strawberry

April Fool’s Day Lasagna aka Banana Cream Pie

If you want to fool your family on any day of the year this is the perfect dessert.  When I dished this up my family was convinced it was dinner.  Then they took a bite and got a big surprise when they discovered a delicious dessert instead of the savory dish they were expecting.

Recipe adapted from Food Network

Ingredients:

1 3.4 ounce sugar free instant vanilla pudding

1 pound cake cut into ¼ inch slices

20 reduced fat vanilla wafers

¾ cup strawberry jam

¾ cup part skim milk ricotta cheese

2 teaspoons sugar or one packet monk fruit sweetener

2 bananas sliced

¼ cup diced white chocolate chips

2 tablespoons fresh mint diced

Directions:

  1. Cut a pound cake into ¼ inch slices.
  2. Arrange slices in the bottom of a 7×11 baking dish.
  3. Press 20 vanilla wafers into the cake.
  4. Make the box of instant pudding using 2 cups of nonfat milk.
  5. Microwave the strawberry jam for 30 seconds.
  6. Mix the ricotta cheese with the sugar/sweetener.
  7. Spread strawberry jam over the vanilla wafers.
  8. Spread ricotta cheese over the strawberry jam.
  9. Top with one sliced banana.
  10. Spread ½ vanilla pudding over the banana.
  11. Repeat with a layer of cake.
  12. Press another 20 wafers into the cake.
  13. Top with another sliced banana.
  14. Spread the remainder of the vanilla pudding on top.
  15. Sprinkle the chopped white chocolate chips and mint over the top.
  16. Chill for at least 2 hours before serving.

These waffles have a fantastic texture and flavor.  They taste divine with Greek vanilla yogurt, fresh fruit, and even when topped with peanut butter and jam.  My kids inhaled these waffles and asked for more. Recipe adapted from Fixate Ingredients: 2 cups old fashioned oats
