April Fool’s Day Lasagna aka Banana Cream Pie
If you want to fool your family on any day of the year this is the perfect dessert. When I dished this up my family was convinced it was dinner. Then they took a bite and got a big surprise when they discovered a delicious dessert instead of the savory dish they were expecting.
Recipe adapted from Food Network
Ingredients:
1 3.4 ounce sugar free instant vanilla pudding
1 pound cake cut into ¼ inch slices
20 reduced fat vanilla wafers
¾ cup strawberry jam
¾ cup part skim milk ricotta cheese
2 teaspoons sugar or one packet monk fruit sweetener
2 bananas sliced
¼ cup diced white chocolate chips
2 tablespoons fresh mint diced
Directions:
- Cut a pound cake into ¼ inch slices.
- Arrange slices in the bottom of a 7×11 baking dish.
- Press 20 vanilla wafers into the cake.
- Make the box of instant pudding using 2 cups of nonfat milk.
- Microwave the strawberry jam for 30 seconds.
- Mix the ricotta cheese with the sugar/sweetener.
- Spread strawberry jam over the vanilla wafers.
- Spread ricotta cheese over the strawberry jam.
- Top with one sliced banana.
- Spread ½ vanilla pudding over the banana.
- Repeat with a layer of cake.
- Press another 20 wafers into the cake.
- Top with another sliced banana.
- Spread the remainder of the vanilla pudding on top.
- Sprinkle the chopped white chocolate chips and mint over the top.
- Chill for at least 2 hours before serving.
