Ham Quesadillas
Leftover ham tastes fantastic when paired with melted cheese and roasted vegetables. This is a quick and easy lunch or dinner that is easy to customize to your liking.
Ingredients–
1-2 whole wheat tortillas per person
1 slice cooked spiral ham per serving
Vegetables- tomatoes, onion, peppers, spinach, etc..
2 slices of cheese per serving (Pepper Jack, Colby Jac, etc..)
Directions:
- Preheat oven to 350 degrees. Line a baking sheet with aluminum foil.
- Spread out tortillas on the baking sheet.
- Top tortillas with cheese slices, ham, vegetables, etc..
- If making a kid size tortilla fold it in half and only put toppings on one half. I made mine an open face quesadilla and covered the entire tortilla with toppings.
- Spray tortillas with olive oil spray.
- Bake 10-15 minutes or until cheese melts.
- Broil 3 minutes on high to achieve a crispy texture.
