I have had curried chicken and apple wraps and salad before, so I decided to try using tofu instead of chicken for a new meal. This was so insanely delicious. It works for lunch or dinner as you can make a wrap or serve the curry mixture over a spinach salad.

Ingredients:
1 block firm tofu drained
1/3 cup mango jam
1/3 cup nonfat plain Greek yogurt
2 tablespoons curry powder (divided)
3 tablespoons curry powder (divided)
1 tablespoon honey
1-2 tablespoons fresh lime juice
1 teaspoon salt
1 can low sodium chick peas drained
4 green onions diced
¼ cup fresh mint chopped
¼ cup golden raisins
1 apple (peeled or unpeeled) your choice diced
Directions:
Drain the tofu. Place on paper towels and cover with paper towels to remove excess water.
Dice tofu into 1 inch cubes.
Mix 2 tablespoons olive oil, 1 tablespoon honey, and 1 tablespoon curry powder in a small dish. Pour the curry mixture over the tofu to marinate for at least 30 minutes.
Mix mango jam, Greek yogurt, salt, 1 tablespoon curry powder, and lime juice in a large bowl.
Add apple, raisins, mint, and chick peas.
Air fry the tofu at 390 degrees for 20 minutes (10 minutes on each side).
Add the tofu and green onions. Mix
Serve on a wrap or over a bed of spinach to make a salad.

This salmon disappeared in the blink of an eye! The marinade left wonderful flavors and I may have to make it again just to have seconds. Luckily the marinade recipe made so much I have enough unused and leftover that I can make this again or use the marinade in another recipe.

2 pounds salmon
1/3 cup reduced sodium soy sauce
¼ cup molasses
1 tablespoon sesame oil
2 teaspoons minced garlic
1 teaspoon ginger powder

Directions:
Preheat oven to 350 degrees. Line a 9×13 glass baking dish with aluminum foil. Spray with olive oil spray.

Preheat the oven to 450 degrees.
