Honey Mustard Coleslaw

Honey mustard dressing tastes great any time, but when you pair this coleslaw with the right main dish it really shines.  I topped my Ranch Chicken Sandwich/Wrap with this coleslaw for an extra kick.

Ingredients:

 Dressing-

½ cup plain nonfat Greek yogurt

¼ cup yellow mustard

¼ cup honey

Coleslaw-

½ head cabbage shredded

½ cup matchstick carrots

3 radishes cut into matchsticks

1 bell pepper diced

½ sweet onion diced

2 green onions diced

Directions:

  1. Add all ingredients to a large bowl for coleslaw.  Mix to combine.
  2. Add all ingredients to a small bowl for dressing.  Mix to combine.
  3. Add dressing to coleslaw.  Mix to coat the entire salad.

I love chocolate chip cookies so these energy balls are the perfect treat after an intense workout. Ingredients: 1 cup old fashioned oats 1 scoop vanilla protein powder 1 scoop chocolate protein powder ½ teaspoon cinnamon ¼ cup pure or light maple syrup 1 tablespoon

I hadn’t thought about shoofly pie in years until it was in an episode of Best Baker in America, so I decided to make one.  Yummy as I remembered if when I lightened up the recipe a tad.

Recipe adapted from Food Network

Ingredients:

Crust-

1 sleeve cinnamon graham crackers

2 tablespoons extra virgin coconut oil melted

Pie-

¾ cup molasses

1 tablespoon all-purpose flour

1 egg lightly beaten

½ teaspoon baking soda

½ cup hot coffee (or water)

Topping-

¾ cup all-purpose flour

¼ cup dark brown sugar

¼ cup granulated sugar

2 tablespoons extra virgin coconut oil melted

Optional: Top with vanilla ice cream or whip cream

Directions:

  1. Preheat oven to 350 degrees.
  2. Crust- Add graham crackers to food processor. Pulse until a fine crumb.  Add melted coconut oil.  Pulse to mix. Use a spatula to transfer to a pie pan.  Gently press down.
  3. Pie- Add molasses, flour, and egg to a bowl.  Mix gently.  Dissolve the baking soda in the hot coffee.  Stir the coffee mixture into the molasses. Transfer to pie pan.
  4. Topping- Add flour, sugars, and coconut oil to a food processor. Pulse to mix.  Sprinkle over the pie filling. 
  5. Bake 30-40 minutes until filling is set.  Let cool before eating.
  6. Top with vanilla ice cream or whip cream.

Salads can get boring when eaten daily.  This salad combines roasted vegetables with tasty shrimp to wake up your taste buds. The addition of shrimp makes this salad filing enough to be a full meal or you can just eat a little and enjoy this 

Zucchini Bread Waffles

Zucchini Bread Waffles

If you like zucchini bread then you will go crazy for these waffles. The blend of spices makes you feel like you are eating fresh zucchini bread.

Recipe adapted from Food Network

Ingredients:

1 cup grated/diced zucchini

1 carrot peeled and diced

2 cups whole wheat waffle mix

1 scoop vanilla protein powder

1 teaspoon ground cinnamon

½ teaspoon nutmeg

½ teaspoon salt

1 teaspoon vanilla extract

2 eggs at room temperature

½ cup unsweetened applesauce

½ cup  almond milk

Directions:

  1. Preheat waffle iron.
  2. Add waffle mix, protein powder, cinnamon, nutmeg, and salt to a medium bowl.  Mix to combine.
  3. Add eggs, vanilla extract, and applesauce mix to combine. 
  4. Add almond milk (or milk of your choice). Mix together.
  5. Fold in zucchini and carrots.
  6. Spray waffle maker with butter/nonstick spray.
  7. Add 1 cup of mix at a time to the waffle maker.
  8. Cook until waffles are done. 
  9. Transfer to a covered dish to keep warm.
  10. Top with nonfat vanilla Greek yogurt, apple butter, jam, or syrup.
  11. I served this with a zucchini, green pepper, tomato, and onion omelet.
