Zucchini Bread Waffles
If you like zucchini bread then you will go crazy for these waffles. The blend of spices makes you feel like you are eating fresh zucchini bread.

Ingredients:
1 cup grated/diced zucchini
1 carrot peeled and diced
2 cups whole wheat waffle mix
1 scoop vanilla protein powder
1 teaspoon ground cinnamon
½ teaspoon nutmeg
½ teaspoon salt
1 teaspoon vanilla extract
2 eggs at room temperature
½ cup unsweetened applesauce
½ cup almond milk
Directions:
- Preheat waffle iron.
- Add waffle mix, protein powder, cinnamon, nutmeg, and salt to a medium bowl. Mix to combine.
- Add eggs, vanilla extract, and applesauce mix to combine.
- Add almond milk (or milk of your choice). Mix together.
- Fold in zucchini and carrots.
- Spray waffle maker with butter/nonstick spray.
- Add 1 cup of mix at a time to the waffle maker.
- Cook until waffles are done.
- Transfer to a covered dish to keep warm.
- Top with nonfat vanilla Greek yogurt, apple butter, jam, or syrup.
- I served this with a zucchini, green pepper, tomato, and onion omelet.
