Strawberry and Apple Crumble
Strawberries and apples mix together in this fantastic dessert to make a sweet and healthy delightful dish.
Ingredients:
Topping-
1 cup old fashioned oats
½ cup flour
½ cup light brown sugar
Optional: ½ cup chopped nuts (almonds, pecans, etc..)
½ teaspoon ground cinnamon
1/8 teaspoon salt
3 tablespoons extra virgin coconut oil
Filling-
3 cups diced strawberries (or other berries)
2 cups peeled and diced apples (or pears)
3 packets Monk Fruit sweetener or 3 tablespoons sugar
2 tablespoons cornstarch
1 tablespoon lemon juice
Directions:
- Add oats, flour, brown sugar, and nuts (if using), cinnamon, and salt to a food processor. Melt the coconut oil and drizzle over the mixture. Pulse to mix. Transfer to an air-tight container and freeze for at least 20 minutes or up to 2 months.
- Preheat oven to 375. Spray an 8×8 dish with baking spray.
- Add fruit to a large bowl. Toss with sugar, cornstarch, lemon juice, and 1 teaspoon cinnamon.
- Transfer fruit to prepared baking dish. Sprinkle topping over the fruit.
- Bake 35-45 minutes until fruit is bubbling and the topping is golden brown.
- Let stand at least 15 minutes before serving.
- Optional: top with vanilla ice cream or whipped cream.
