Shoofly Pie

I hadn’t thought about shoofly pie in years until it was in an episode of Best Baker in America, so I decided to make one.  Yummy as I remembered if when I lightened up the recipe a tad.

Recipe adapted from Food Network

Ingredients:

Crust-

1 sleeve cinnamon graham crackers

2 tablespoons extra virgin coconut oil melted

Pie-

¾ cup molasses

1 tablespoon all-purpose flour

1 egg lightly beaten

½ teaspoon baking soda

½ cup hot coffee (or water)

Topping-

¾ cup all-purpose flour

¼ cup dark brown sugar

¼ cup granulated sugar

2 tablespoons extra virgin coconut oil melted

Optional: Top with vanilla ice cream or whip cream

Directions:

  1. Preheat oven to 350 degrees.
  2. Crust- Add graham crackers to food processor. Pulse until a fine crumb.  Add melted coconut oil.  Pulse to mix. Use a spatula to transfer to a pie pan.  Gently press down.
  3. Pie- Add molasses, flour, and egg to a bowl.  Mix gently.  Dissolve the baking soda in the hot coffee.  Stir the coffee mixture into the molasses. Transfer to pie pan.
  4. Topping- Add flour, sugars, and coconut oil to a food processor. Pulse to mix.  Sprinkle over the pie filling. 
  5. Bake 30-40 minutes until filling is set.  Let cool before eating.
  6. Top with vanilla ice cream or whip cream.
