Peanut Butter and Jelly Bread

If you like peanut butter and jelly sandwiches then you will be thrilled with this healthy protein packed bread.

Recipe adapted from Food Network

Ingredients:

1 1/3 cup milk (I used unsweetened vanilla almond milk)

¼  cup reduced fat or natural peanut butter

2 cups whole wheat flour

1 scoop (4 tablespoons) powdered peanut butter

1 scoop vanilla protein powder

¼ cup light brown sugar

4 teaspoons baking powder

½ teaspoon salt

1 teaspoon vanilla extract

½ cup peanut butter chips

1-2 cups strawberry jam (or blueberry jam)

Sliced strawberries for topping

Directions:

  1. Preheat the oven to 350 degrees.  Spray a bread pan with baking spray.
  2. In a large bowl whisk the milk and peanut butters until well blended. Add the flour, protein powder, sugar, baking powder, and salt.  Fold to combine.
  3. Add the peanut butter chips and gently mix in.
  4. Pour enough batter in the pan to fill it about halfway.  Spread a layer of strawberry jam.
  5. Top with the remaining batter.
  6. Gently press sliced strawberries into the top. 
  7. Optional: Sprinkle with sugar in the raw or brown sugar.
  8. Bake 50 minutes or until a toothpick inserted in the center comes out clean.
  9. Let cool for an hour before removing from the pan.
