Peanut Butter and Jelly Bread
If you like peanut butter and jelly sandwiches then you will be thrilled with this healthy protein packed bread.

Ingredients:
1 1/3 cup milk (I used unsweetened vanilla almond milk)
¼ cup reduced fat or natural peanut butter
2 cups whole wheat flour
1 scoop (4 tablespoons) powdered peanut butter
1 scoop vanilla protein powder
¼ cup light brown sugar
4 teaspoons baking powder
½ teaspoon salt
1 teaspoon vanilla extract
½ cup peanut butter chips
1-2 cups strawberry jam (or blueberry jam)
Sliced strawberries for topping
Directions:
- Preheat the oven to 350 degrees. Spray a bread pan with baking spray.
- In a large bowl whisk the milk and peanut butters until well blended. Add the flour, protein powder, sugar, baking powder, and salt. Fold to combine.
- Add the peanut butter chips and gently mix in.
- Pour enough batter in the pan to fill it about halfway. Spread a layer of strawberry jam.
- Top with the remaining batter.
- Gently press sliced strawberries into the top.
- Optional: Sprinkle with sugar in the raw or brown sugar.
- Bake 50 minutes or until a toothpick inserted in the center comes out clean.
- Let cool for an hour before removing from the pan.
