I love pasta salad!  This version uses farm fresh ingredients with a red wine vinaigrette. Recipe adapted from Food Network Ingredients: ½ cup extra virgin olive oil 1/3 cup red wine vinegar 1 tablespoon honey 1 tablespoon Italian seasoning 1 teaspoon dill seasoning 1 zucchini

Plantain Chips with Mint Sauce

Sweet plantains are sure to take you to the tropics.  These taste amazing even without the mint sauce.  I saved the mint sauce to use as a salad dressing.

Ingredients:

2 yellow ripe plantains

Zest and juice from 1 lime (2 tablespoons lime juice)

Zest from 1 orange, 2 tablespoons orange juice

1 tablespoon extra-virgin olive oil

Mint Sauce-

1 garlic clove

½ cup plain nonfat Greek yogurt

½ cup fresh mint leaves

2 tablespoons fresh cilantro

½ teaspoon salt

1 tablespoon lime juice, zest from 1 lime

1 tablespoon white vinegar

1 tablespoon honey

Directions:

Plantains-

  1. Slice plantains into ¼ inch thick slices. 
  2. Transfer slices to a shallow dish where you can spread them out a little.
  3. Sprinkle orange and lime zest over plantains.  Mix orange juice, lime juice, and olive oil.  Sprinkle over the plantains.  Let marinate while you prepare dip. 
  4. I air-fried these for 20 minutes at 400 degrees.  They still had some juice but tasted cooked.  You can cook longer if you want a crispier “chip” or you can cut the slices thinner.

Mint Sauce-

  1. Add all ingredients to a food processor.  Pulse to mix. 
  2. Refrigerate until ready to use.
  3. Use extra dip as a salad dressing or dip for fresh fruit and veggies.

Buffalo Chicken Lettuce Wraps with Green Goddess Dressing

Buffalo chicken in any form makes me smile.  These lettuce wraps are so light and fresh. I can’t believe I had never tried lettuce wraps in the past.  The green goddess dressing was so delicious I made a second batch to use on salads.

Ingredients:

Buffalo Chicken Lettuce Wraps-

2 boneless skinless chicken breasts diced

2 teaspoons garlic powder

1 teaspoon paprika

1/8 teaspoon salt

1/8 teaspoon pepper

1/3 cup mild buffalo sauce

2 tablespoons lite maple syrup

2 cups cooked corn

½ cup cherry tomatoes halved

Lettuce- Bibb, romaine, etc…

Green Goddess Dressing-

1 cup chopped basil

¼ cup parsley

3 green onions whole

1 clove garlic

¼ cup plain nonfat Greek yogurt

¼ cup extra virgin olive oil

¼ teaspoon salt

1 tablespoon honey

Directions:

Green Goddess Dressing-

  1. Place all ingredients in a food processor or blender.  Pulse until smooth.  Transfer to a covered dish and refrigerate until ready to use.

Buffalo Chicken-

  1. Mix garlic powder, paprika, salt, and pepper in a small bowl. 
  2. Sprinkle spices over the diced chicken.  Let chicken marinate for at least 15 minutes or overnight.  
  3. Spray a nonstick pan with olive oil spray.  Cook the chicken on medium heat until it is no long pink.
  4. Add buffalo sauce and maple syrup.  Mix to coat chicken.  Cook for a few more minutes.
  5. Spread out lettuce.  Top each piece of lettuce with chicken, corn, and cherry tomatoes.  Drizzle with green goddess dressing.
  6. You can also serve the chicken on buns, wraps, or over a salad.

Jicama Mango Slaw

Jicama Mango Slaw

Jicama has the texture of an apple and picks up flavors from dressings and other fruits.  This slaw is full of texture and flavor.

Ingredients:

½ jicama sliced into matchsticks

1 mango diced

1 cup pineapple chunks

2 radishes sliced in matchsticks

¼ cup red onion diced

1 lime zested and juiced

2 tablespoons apple cider vinegar

3 tablespoons honey

1 bunch cilantro chopped

1 teaspoon chili powder

Directions:

  1. Add jicama, mango, pineapple, radish, and onion to a large bowl and mix.
  2. In a small bowl mix lime zest and juice, vinegar, honey, and chili powder.
  3. Pour dressing over fruits.  Mix to coat.
  4. Add fresh cilantro.
  5. Refrigerate until ready to serve.
