Parmesan Roasted Zucchini

Parmesan Roasted Zucchini

Roasted zucchini topped with breadcrumbs, herbs, and parmesan cheese make a side dish you will want to make again.

Recipe adapted from Food Network

Ingredients:

2 zucchini or yellow squash halved lengthwise

1 garlic clove

1 tablespoon extra-virgin olive oil

1 tablespoon fresh parsley

2 tablespoons fresh basil chopped

¼ cup grated parmesan cheese

¼ cup shredded mozzarella cheese

½ cup panko breadcrumbs

Directions:

  1. Preheat the oven to 425 degrees.  Line a baking sheet with aluminum foil.
  2. Scoop out the seeds to make a small channel in the zucchini.
  3. Mix the garlic and olive oil in a small bowl.  Spread the olive oil on the inside of the squash.
  4. Place zucchini cut side down on the baking sheet.  Cook for 12-15 minutes.
  5. Mix parsley, basil, parmesan cheese, mozzarella, and breadcrumbs in a small dish.
  6. Flip zucchini over.  Use a spoon to sprinkle the cheese and breadcrumb mixture over the zucchinis. 
  7. Bake for 8-10 more minutes.
