Summer Pasta Salad
I love pasta salad! This version uses farm fresh ingredients with a red wine vinaigrette.
Recipe adapted from Food Network
Ingredients:
½ cup extra virgin olive oil
1/3 cup red wine vinegar
1 tablespoon honey
1 tablespoon Italian seasoning
1 teaspoon dill seasoning
1 zucchini sliced and cut into quarters
1 pint cherry tomatoes halved
1 bell pepper diced or 4-5 mini peppers diced
1 shallot diced
2-3 radishes sliced into matchsticks
1 cup cooked corn
¼ cup fresh parsley
1 box rotini noodles (I used Ronzoni SuperGreens Rotini )
Directions:
- Bring a large pot of salted water to a boil. Cook the pasta according to package directions until al dente. Drain and rinse under cold running water. Drain.
- Add pasta and all vegetables to a large bowl.
- In a small bowl whisk olive oil, vinegar, honey, Italian seasoning, dill seasoning.
- Pour dressing over noodles and vegetables.
- Top with fresh parsley.
- Refrigerate until ready to serve. Allow dressing to soak in for at least 30 minutes before serving.
