Summer Pasta Salad

I love pasta salad!  This version uses farm fresh ingredients with a red wine vinaigrette.

Recipe adapted from Food Network

Ingredients:

½ cup extra virgin olive oil

1/3 cup red wine vinegar

1 tablespoon honey

1 tablespoon Italian seasoning

1 teaspoon dill seasoning

1 zucchini sliced and cut into quarters

1 pint cherry tomatoes halved

1 bell pepper diced or 4-5 mini peppers diced

1 shallot diced

2-3 radishes sliced into matchsticks

1 cup cooked corn

¼ cup fresh parsley

1 box rotini noodles (I used Ronzoni SuperGreens Rotini )

Directions:

  1. Bring a large pot of salted water to a boil.  Cook the pasta according to package directions until al dente.  Drain and rinse under cold running water.  Drain.
  2. Add pasta and all vegetables to a large bowl.
  3. In a small bowl whisk olive oil, vinegar, honey, Italian seasoning, dill seasoning.
  4. Pour dressing over noodles and vegetables.
  5. Top with fresh parsley.
  6. Refrigerate until ready to serve. Allow dressing to soak in for at least 30 minutes before serving.
