Jicama Mango Slaw
Jicama has the texture of an apple and picks up flavors from dressings and other fruits. This slaw is full of texture and flavor.
Ingredients:
½ jicama sliced into matchsticks
1 mango diced
1 cup pineapple chunks
2 radishes sliced in matchsticks
¼ cup red onion diced
1 lime zested and juiced
2 tablespoons apple cider vinegar
3 tablespoons honey
1 bunch cilantro chopped
1 teaspoon chili powder
Directions:
- Add jicama, mango, pineapple, radish, and onion to a large bowl and mix.
- In a small bowl mix lime zest and juice, vinegar, honey, and chili powder.
- Pour dressing over fruits. Mix to coat.
- Add fresh cilantro.
- Refrigerate until ready to serve.
