Plantain Chips with Mint Sauce

Sweet plantains are sure to take you to the tropics.  These taste amazing even without the mint sauce.  I saved the mint sauce to use as a salad dressing.

Ingredients:

2 yellow ripe plantains

Zest and juice from 1 lime (2 tablespoons lime juice)

Zest from 1 orange, 2 tablespoons orange juice

1 tablespoon extra-virgin olive oil

Mint Sauce-

1 garlic clove

½ cup plain nonfat Greek yogurt

½ cup fresh mint leaves

2 tablespoons fresh cilantro

½ teaspoon salt

1 tablespoon lime juice, zest from 1 lime

1 tablespoon white vinegar

1 tablespoon honey

Directions:

Plantains-

  1. Slice plantains into ¼ inch thick slices. 
  2. Transfer slices to a shallow dish where you can spread them out a little.
  3. Sprinkle orange and lime zest over plantains.  Mix orange juice, lime juice, and olive oil.  Sprinkle over the plantains.  Let marinate while you prepare dip. 
  4. I air-fried these for 20 minutes at 400 degrees.  They still had some juice but tasted cooked.  You can cook longer if you want a crispier “chip” or you can cut the slices thinner.

Mint Sauce-

  1. Add all ingredients to a food processor.  Pulse to mix. 
  2. Refrigerate until ready to use.
  3. Use extra dip as a salad dressing or dip for fresh fruit and veggies.
