Grilled Rib Eye Steak with Mango Chimichurri

Grilled steaks are always a favorite of my kids.  These steaks are marinated and topped with a sweet mango chimichurri. 

Recipe adapted from Food Network

Ingredients:

Mango Chimichurri-

½ cup fresh mint leaves

3 cloves garlic

2 tablespoons fresh cilantro

1 tablespoon fresh parsley

½ cup extra virgin olive oil

¼ cup red wine vinegar

2 tablespoons honey

2 teaspoons paprika

1 ripe mango

Steak-

3 1 ½ inch thick well marbled rib eye steaks

Directions:

  1. Mango Chimichurri- Add mint, garlic, cilantro, parsley, olive oil, red wine vinegar, honey, paprika, and mango to a food processor.  Pulse to create a smooth sauce.
  2. Pour some chimichurri and spread on the bottom of a large, covered dish.  Place the steaks on the sauce.  Pour some sauce on the steaks and spread to coat.  Marinated in the refrigerator for at least 30 minutes preferably a few hours.
  3. Remove the steak from the refrigerator at least 30 minutes before cooking.
  4. Preheat a grill to high heat.  Grill the steak for at least 5 minutes per side. Let the steak rest 5 minutes before slicing.
  5. Top steak with mango chimichurri.
