Tahini Reese’s Pie

Tahini Reese’s Pie

I love the flavor of tahini just as much as I love peanut butter.  I lightened up this pie by using yogurt and reduced fat graham crackers.  I topped my pie with Peanut Lover’s Reese’s, but any variety of Reese’s would work.

Ingredients:

Crust-

1 sleeve reduced fat graham crackers

¼ cup tahini

Filling-

1 ½ cups tahini

2/3 cup nonfat vanilla Greek yogurt

1 cup heavy cream

½ cup powdered sugar

½ teaspoon cinnamon

1 teaspoon vanilla extract

Topping:

3-4 Reese’s chopped

Directions:

  1. Add graham crackers to food processor.  Pulse to chop to a fine crumb.
  2. Add tahini and pulse to mix.
  3. Use a spatula to transfer graham cracker mixture to a pie crust.  Press down to firm.
  4. Place crust in the refrigerator while you make the filling.
  5. Add tahini and yogurt to a stand mixer with paddle attachment.  Mix on medium to combine.
  6. Add heavy cream, vanilla extract, powdered sugar, and cinnamon.  Mix on medium to combine.
  7. Use a spatula to transfer filling to the pie.  Gently spread out the filling.
  8. Top pie with diced Reese’s. 
  9. Refrigerate pie to allow it to set for at least 4 hours.
  10. Enjoy!
