Eggplant with Peanut Dressing

Eggplant is a wonderful light vegetable and peanut goes with everything in my mind.  This side dish is simple to prepare and full of flavor.

Recipe adapted from Food Network

Ingredients:

1 large eggplant sliced or several small eggplants sliced into ¼ inch slices

2 tablespoons peanut butter

1 garlic clove

Juice of 1 lemon

1 teaspoon dried oregano

Dash red pepper flakes

Olive oil spray

Directions:

  1. Preheat grill to medium heat.
  2. Puree peanut butter, garlic, lemon juice, and oregano in food processor or blender. 
  3. Spray eggplant slices with olive oil spray.  Sprinkle with dried oregano.
  4. Grill eggplant 3 minutes per side.
  5. Top with peanut dressing.
