Eggplant with Peanut Dressing
Eggplant is a wonderful light vegetable and peanut goes with everything in my mind. This side dish is simple to prepare and full of flavor.
Recipe adapted from Food Network
Ingredients:
1 large eggplant sliced or several small eggplants sliced into ¼ inch slices
2 tablespoons peanut butter
1 garlic clove
Juice of 1 lemon
1 teaspoon dried oregano
Dash red pepper flakes
Olive oil spray
Directions:
- Preheat grill to medium heat.
- Puree peanut butter, garlic, lemon juice, and oregano in food processor or blender.
- Spray eggplant slices with olive oil spray. Sprinkle with dried oregano.
- Grill eggplant 3 minutes per side.
- Top with peanut dressing.
