Apple Cider Glazed Grilled Pork Chops

These glazed pork chops are tender, sweet, and just plain delicious!

Ingredients:

½ cup packed dark brown sugar divided

6 bone in pork chops

½ cup apple cider

¼ cup apple cider vinegar

2 teaspoons Worcestershire sauce

3 cloves garlic minced

1 tablespoon fresh ginger diced

1 medium onion sliced into ¼ inch slices

¼ cup salt

Directions:

  1. Whisk ¼ cup salt, ¼ cup brown sugar, and 3 cups warm water.  Place the pork chops in a 9×13 dish.  Pour the liquid over the pork.  Let the pork sit in the brine for at least 10 minutes or even overnight.
  2. Mix the apple cider, vinegar, Worcestershire, ¼ cup brown sugar, garlic, and ginger and heat in a small saucepan until boiling.  Reduce heat and allow to cook at medium for 15 minutes stirring often. Remove from heat and set aside.
  3. Preheat grill to high heat.
  4. Remove the pork chops from the brine.
  5. Cook pork chops for 5-7 minutes per side.
  6. Immediately spoon 1 tablespoon of glaze on each pork chop and allow pork chops to rest at least 5 minutes before slice.
  7. Grill onions for 5 minutes stirring once.
  8. Serve glazed pork chops with grilled onions.

Pumpkin Spice Muffins with Shakeology Frosting

I was in a pumpkin mood when I woke up this morning so I decided to make healthy pumpkin spice muffins with a pumpkin shakeology yogurt frosting.

Ingredients-

Muffins-

1 ¾ cups flour

1 ½ teaspoon baking powder

½ teaspoon salt

2 teaspoons pumpkin spice

1 ½ cups pure pumpkin puree

¼ cup extra virgin coconut oil melted

2 large eggs

¼ cup pure maple syrup

1 teaspoon pure vanilla

¼ cup unsweetened almond or coconut milk

1 teaspoon vanilla extract

Frosting-

½ cup nonfat vanilla Greek yogurt

¼ cup coconut sugar

2 packets Pumpkin Spice Plant Based Vegan Shakeology

¼ cup unsweetened coconut or almond milk

Directions:

  1. Preheat the oven to 375 degrees. Line a muffin tin with liners or spray with baking spray.
  2. Combine flour, baking powder, salt, and pumpkin spice in a medium bowl.
  3. Place pumpkin puree, coconut oil, milk, eggs, maple syrup, and vanilla extract in a separate bowl and whisk or mix until smooth.
  4. Gradually add the flour mixture to the pumpkin mixture until incorporated.
  5. Use a large cookie scooper to fill the muffin tins.
  6. Bake 20-25- minutes until a toothpick inserted in the center comes out clean.
  7. Let cool on a wire rack for 10 minutes before removing from the muffin tins.
  8. Add yogurt and coconut sugar to a mixer. Mix until smooth.
  9. Add 1 packet of shakeology and 1/8 cup milk.  Mix until smooth scraping down the sides.
  10. Add second packet of shakeology and the remaining milk.  Continue to mix until smooth.
  11. I transferred my frosting to a icing tool to ice my cupcakes, but you can use a spatula or a zip lock bag with a tip and a corner cut off.
  12. Store in an air-tight container.
  13. Enjoy!

Chipotle peppers have been one of my favorite spicy ingredients to experiment with this year.  This chipotle honey glaze really makes this fish stand out.  Recipe adapted from Food Network Ingredients- 6 tilapia filets 1 chipotle pepper in adobo sauce (more if you like spice)

Sometimes I want a coleslaw with a kick! This chipotle honey coleslaw is a mixture of sweet and spicy and full of veggie goodness.

Ingredients:

Coleslaw-

1 bag coleslaw mix

½ cup shredded carrots

¼ cup diced red onion

2-3 radishes thinly sliced into matchsticks

Chipotle Honey Vinaigrette-

1 chipotle pepper in adobo sauce

¼ cup red wine vinegar

¼ cup plain nonfat Greek yogurt

2 tablespoons honey

1 tablespoon Dijon mustard

1 teaspoon Italian seasoning

1 clove garlic

¼ cup olive oil

Directions:

  1. Add coleslaw mix, red onion, radishes, and carrots to a large bowl.  Mix to combine.
  2. Add chipotle pepper, yogurt, vinegar, mustard, honey, Italian seasoning, garlic, and olive oil to a food processor.  Pulse to mix well.
  3. Pour the vinaigrette over the coleslaw and mix well to coat the slaw.
  4. Refrigerate until ready to serve.
  5. Stir to distribute dressing before serving.
