Spicy Corn and Veggie Salad

Corn on the cob is a treat I love in the summer, but since corn isn’t exactly packed with nutrients I try to pair it with other veggies that are.  This light salad is full of flavor and loaded with antioxidant rich veggies.

Ingredients:

2 cobs corn on the cob

2-3 radishes sliced

1 small cucumber sliced

1 bell pepper diced

1 ripe tomato diced

1/2 cup matchstick carrots

½ jalapeno pepper diced

¼ cup red onion diced

1 tablespoon Buffalo sauce

1 lime zested and juiced

1 teaspoon cumin

Directions:

  1. Cook corn on the cob and cut corn off 2 cobs once it is cool.  Add corn to a medium bowl
  2. Add radishes, carrots, cucumber, bell pepper, tomato, jalapeno, and onion to the medium bowl.  Mix to combine.
  3. Add lime zest and juice.
  4. Add cumin and buffalo sauce.  Mix well.
  5. Refrigerate until ready to serve.
  6. Enjoy!

Strawberry Lemonade Cake

My brother always orders pink or strawberry lemonade to drink when we go out to eat, so I decided to make a strawberry lemonade cake for his birthday.

Ingredients:

Cake-

2/3 cup strawberry frozen concentrate thawed

½ lemon juiced and zested

1 stick unsalted butter at room temperature

2 ½ cups cake flour

1 cup granulated sugar

2 ½ teaspoons baking powder

1 teaspoon salt

3 large eggs

1 teaspoon vanilla extract

Frosting-

1 stick unsalted butter at room temperature

8 ounces reduced fat cream cheese at room temperature

3 cups confectioners’ sugar

2 tablespoons strawberry frozen concentrate

Zest from ½ lemon

Directions:

  1. Preheat oven to 350 degrees.  Grease or butter a 9×13 glass pan.
  2. Cream butter and sugar in a stand mixer with a paddle attachment.
  3. Add strawberry concentrate and eggs mixing on low.
  4. Add baking powder, lemon juice and zest, salt, and vanilla extract mixing on low.
  5. Add flour ½ cup at a time.  Scrape down the sides as needed.
  6. Transfer cake mixture to 9×13 baking pan.
  7. Bake 30-35 minutes until a toothpick inserted in the center comes out clean.
  8. Let cool on a wire rack.
  9. Once cake has cooled make the frosting.
  10. Cream butter and cream cheese in stand mixer on medium heat. 
  11. Add lemon juice and zest.
  12. Add powdered sugar ½ cup at a time.
  13. Add strawberry concentrate.  Add more concentrate if you need the frosting.
  14. Enjoy!

Crab Dip Pizza with Broccoli Cauliflower Carrot Crust

I love crab dip and thought crab dip on a pizza seemed like a good idea.  I like packing vegetables into my pizza crust.  I had broccoli, cauliflower, and carrots I needed to use up, so I decided to combine those in my pizza crust.

My children and I love crab dip.  They had been asking for stuffed crust pizza, so I decided to try making it for them.

Ingredients:

Pizza Crust-

1 package mozzarella string cheeses ripped in half

1 or 2 store bought thin pizza crusts

Butter spray

1-2 teaspoons Old Bay

Crab Dip-

1 pound crab meat

½ cup plain nonfat Greek yogurt

1/2 sweet onion diced

1 tablespoon lemon juice

2 tablespoons Worcestershire

1 tablespoon Dijon mustard

1-2 teaspoons hot sauce

½ cup reduced fat shredded cheddar cheese

½ cup shredded Monterey jack cheese

Directions:

  1. Preheat oven to 400 degrees. Line a baking sheet with aluminum foil.
  2. Spread crust out on baking sheet.  Roll to the edges of the baking sheet.
  3. Line pizza crust with mozzarella cheese.  Fold the edges up to cover the cheese.
  4. Spray crust with butter spray.
  5. Sprinkle with Old Bay.
  6. Bake 10 minutes.
  7. Mix crab meat, yogurt, onion, lemon juice, Worcestershire, Dijon, and hot sauce in a medium bowl.  Fold in shredded cheeses.
  8. Spread crab dip mixture on the pizza.  I used half on this pizza and half on a broccoli crust pizza.   
  9. Sprinkle some more shredded cheese on top if you really like cheese like my family.
  10. Bake 10-15 more minutes.
  11. Enjoy!
I made my other stuffed crust pizza half cheese and half pepperoni and bacon.
