Curried Tofu and Apple Salad/Wraps
I have had curried chicken and apple wraps and salad before, so I decided to try using tofu instead of chicken for a new meal. This was so insanely delicious. It works for lunch or dinner as you can make a wrap or serve the curry mixture over a spinach salad.

Ingredients:
1 block firm tofu drained
1/3 cup mango jam
1/3 cup nonfat plain Greek yogurt
2 tablespoons curry powder (divided)
3 tablespoons curry powder (divided)
1 tablespoon honey
1-2 tablespoons fresh lime juice
1 teaspoon salt
1 can low sodium chick peas drained
4 green onions diced
¼ cup fresh mint chopped
¼ cup golden raisins
1 apple (peeled or unpeeled) your choice diced
Directions:
- Drain the tofu. Place on paper towels and cover with paper towels to remove excess water.
- Dice tofu into 1 inch cubes.
- Mix 2 tablespoons olive oil, 1 tablespoon honey, and 1 tablespoon curry powder in a small dish. Pour the curry mixture over the tofu to marinate for at least 30 minutes.
- Mix mango jam, Greek yogurt, salt, 1 tablespoon curry powder, and lime juice in a large bowl.
- Add apple, raisins, mint, and chick peas.
- Air fry the tofu at 390 degrees for 20 minutes (10 minutes on each side).
- Add the tofu and green onions. Mix
- Serve on a wrap or over a bed of spinach to make a salad.
