Pineapple Upside Down Pancakes
We love pineapple upside down cake and these pineapple upside down pancakes do not disappoint. These are a breeze to prepare and are sure to make you think you are eating dessert for breakfast.
Recipe adapted from Food Network
Ingredients:
2 cups whole wheat pancake/waffle mix
1 scoop vanilla protein powder
2 tablespoons brown sugar
8 maraschino cherries
8 pineapple slices
Directions:
- Place pineapple slices on a paper towel and sprinkle with brown sugar.
- Spray a nonstick skillet with butter spray and heat to medium heat.
- Place pineapples sugared side down on the skillet. Let pineapples cook for 5 minutes.
- Place a cherry in the center of the pineapple rings.
- Pour ¼ cup pancake batter on and around the pineapple.
- Cook until the batter starts to bubble in about 3 minutes.
- Flip gently and cook 2 more minutes.
- Transfer to a plate.
- Serve with nonfat vanilla Greek yogurt, maple syrup, or a drizzle of juice from maraschino cherries.
