Italian beef sandwiches are one of my favorite crock pot dinners. My grandfather loved these too, so I think of him every time I prepare this recipe. Note: I often prepare this as a freezer meal. Then I just thaw everything in the freezer bag 48 hours in advance of cooking and throw it in the crock pot.
Ingredients:
2 pound beef chuck roast fat trimmed
1 red bell pepper sliced
1 green bell pepper sliced
1 white onion sliced
1 cube vegetable or beef bouillon soup base
1 tablespoon garlic powder
2 tablespoons Italian seasoning or Bruschetta Blend mix
1 cup water
½ cup nonfat plain Greek yogurt
1 teaspoon garlic powder
Sliced provolone cheese
Buns, wraps, etc… for serving
Directions:
Add sliced peppers, onions, chuck roast, bouillon cube, garlic powder, Italian seasoning, and water to a crock pot.
Cook on high 4-6 hours or on low 8-10 hours.
Remove beef from crock pot. Slice. Then return to the crock pot.
Mix garlic powder and Greek yogurt in a small bowl.
To serve use a slotted spoon to remove beef, peppers, and onions from the crock pot and place on buns/wraps. Top with provolone cheese and garlic aioli. Drizzle on liquid from the crock pot if desired.
