Crunchy Ranch Slaw
This is a combination I would have never thought of by myself. I had fun torturing my boys and making them remove all the fronds from the fennel for this slaw. This is a tasty and refreshing summer slaw that tastes best when made a day in advance.

Ingredients:
½ cup nonfat plain Greek yogurt
¼ cup chopped fresh dill
1 tablespoon sugar
1 tablespoon white wine vinegar
1 teaspoon yellow mustard
1 tablespoon honey
½ teaspoon garlic powder
½ teaspoon black pepper
1 crown broccoili
1 bag coleslaw mix
1 bulb fennel, fronds reserved bulbs sliced
Directions:
- Whisk together the yogurt, dill, sugar, vinegar, honey, mustard, garlic powder, pepper, and salt in a large bowl.
- Remove the stem from the broccoli and slice thinly.
- Add broccoli, coleslaw mix, fennel slices to a large bowl. Toss to mix.
- Pour the dressing over the slaw. Mix to coat.
- Garnish with fennel fronds.
