Crunchy Chocolate Toffee Cookies

Crunchy toffee mixed with chocolate make for a yummy bite sure to brighten up your day.

Ingredients:

1 cup all-purpose flour

1 scoop chocolate protein powder

¼ cup Hershey’s cocoa

½ teaspoon baking soda

¼ teaspoon salt

½ cup unsalted butter

6 tablespoons granulated sugar

6 tablespoons light brown sugar

½ teaspoon vanilla extract

1 egg

8 ounces Heath Bits O Brickle Toffee Bits

Directions:

  1. Preheat oven to 375 degrees.
  2. Mix flour, protein powder, cocoa, baking soda, and salt in a medium bowl.
  3. Beat butter, eggs, and sugars in a stand mixer on medium speed until creamy.
  4. Add vanilla extract. Mix to combine.  Scrape down the sides as needed.
  5. Fold in flour mixture in thirds.  Beat on low to mix in.
  6. Add bag of toffee chips.  Beat on low to distribute.
  7. Use a small cookie scooper to form balls. Space balls a few inches apart.
  8. Bake 11-14 minutes.
  9. Remove cookies from baking sheet and cool on a wire rack.
  10. Enjoy!
