Chorizo & Veggie Stuffed Peppers

I love stuffed peppers and I am always experimenting with new recipes.  This have a little spice from the chorizo and are then filled with vegetables and cheese.

Ingredients:

3 bell peppers halved and seeds removed

4 ounces chorizo

1 bunch Swiss chard chopped

1 zucchini diced

½ eggplant diced

¼ cup red onion diced

1 beefsteak tomato diced

1 cup cheese cubes or shredded cheese

Directions:

  1. Preheat oven to 350 degrees.
  2. Spray a nonstick skillet with olive oil spray.
  3. Cook the chorizo on medium heat for 10 minutes breaking up as it cooks.
  4. Add zucchini, eggplant, Swiss chard, and red onion.  Cook another 10 minutes.
  5. Stir in diced tomatoes.
  6. Lay pepper halves in a 9×13 dish.  Spoon chorizo mixture into pepper halves.
  7. Top with cheese cubes or shredded cheese.
  8. Bake 35 minutes.
  9. Enjoy!

Grilled Portobello Benedict

Grilled Portobello Benedict

If you like portobello muffins and eggs Benedict then this is the perfect dish for you.

Recipe adapted from Food Network

Ingredients:

2 portobello caps gills and stems removed

1-2 tablespoons extra virgin olive oil (I used a garlic infused oil)

1/8 teaspoon salt

2 thin slices fresh mozzarella

2 slices of large tomato

3 large eggs

¼ cup diced bell pepper

1/8 cup diced onion

Black pepper

basil pesto

6 basil leaves

Directions:

  1. Preheat a grill to medium heat.
  2. Brush the mushroom with olive oil.  Sprinkle with salt.
  3. Grill 3 minutes per side. Grill face down first.  Then add mozzarella slice and grill 2 more minutes.
  4. Meanwhile whisk eggs with diced bell pepper and onion. 
  5. Cook the eggs in a nonstick skillet over medium low heat for 3 minutes until eggs are done.
  6. Season eggs with salt and pepper.
  7. Add a slice of tomato to each mushroom cap.  Top with basil leaves.
  8. Divide eggs among mushroom caps. 
  9. Drizzle with pesto.
  10. Enjoy!

When I first saw this recipe I thought it would be good.  Boy am I glad I saved this recipe.  I think this was my favorite rhubarb dessert of the season.  My black raspberries just ripened so I took advantage of that and added 1

Veggie Dagwood Sandwiches/Wrap

I saw this recipe and thought it looked like a veggie filled meal.  I adapted the recipe and served it on a sun-dried tomato wrap instead of slices of bread.  I also grilled the zucchini and used raw red onions versus pickled red onions for time’s sake.  This was a filling meal that I will make again someday. 

Recipe adapted from Food Network

Ingredients:

1 cup plain nonfat Greek yogurt

3 tablespoons ketchup

1 tablespoon sweet pickle relish

1 heart romaine lettuce leaves separated (or bibb lettuce)

Dill Havarti cheese slices

2 radishes

Juice of 1 lemon

1 eggplant

4 garlic cloves

1 teaspoon minced thyme

Salt and pepper

Olive oil for brushing grilled vegetables

1 red onion sliced

2 portobello mushrooms gills removed

1 zucchini

1 beefsteak tomato

Spinach or other lettuce

Sun dried tomato wrap or bread

Directions:

  1. Sauce- Whisk the yogurt, ketchup, and relish in a small bowl.
  2. Marinated Radishes- thinly slice 2 radishes.  Toss with juice from ½ lemon.  Season with salt and pepper.  Let marinate at least 20 minutes.
  3.  Grilled Eggplant and Zucchini- Mix ½ cup olive oil, 3 minced garlic cloves, 1 teaspoon minced thyme.  Thinly slice 1 eggplant.  Brush with garlic oil mixture.  Grill on medium heat 3 minutes per side.
  4. Grilled Portobello- Mix 1/4 cup olive oil and 1 minced garlic cloves.  Remove the gills and stems.  Brush the olive oil over both sides.  Grill on medium heat 3 minutes per side.
  5. Marinated Tomatoes- slice 2 beefsteak tomatoes.  Season with salt and pepper.  Let sit at least 20 minutes.
  6. To serve- Spread yogurt sauce on wrap.  Top with spinach, 1-2 slices of cheese, grilled zucchini, eggplant, and portobello, tomato, radish, and sliced red onion.

Peanut Butter Banana Avocado Muffins

I read you could use avocado to substitute for butter when baking, so I decided to try.  These muffins are so light and fluffy.  You can’t taste the avocado at all.  All you taste is the banana and peanut butter.   Ingredients: 1 cup whole
