Grilled Portobello Benedict

If you like portobello muffins and eggs Benedict then this is the perfect dish for you.

Recipe adapted from Food Network

Ingredients:

2 portobello caps gills and stems removed

1-2 tablespoons extra virgin olive oil (I used a garlic infused oil)

1/8 teaspoon salt

2 thin slices fresh mozzarella

2 slices of large tomato

3 large eggs

ΒΌ cup diced bell pepper

1/8 cup diced onion

Black pepper

basil pesto

6 basil leaves

Directions:

  1. Preheat a grill to medium heat.
  2. Brush the mushroom with olive oil.  Sprinkle with salt.
  3. Grill 3 minutes per side. Grill face down first.  Then add mozzarella slice and grill 2 more minutes.
  4. Meanwhile whisk eggs with diced bell pepper and onion. 
  5. Cook the eggs in a nonstick skillet over medium low heat for 3 minutes until eggs are done.
  6. Season eggs with salt and pepper.
  7. Add a slice of tomato to each mushroom cap.  Top with basil leaves.
  8. Divide eggs among mushroom caps. 
  9. Drizzle with pesto.
  10. Enjoy!
