Grilled Veggie and Steak Salad with Blue Cheese Dressing

The steak and veggies in this recipe were coated with flavor from the marinade and when topped with the blue cheese dressing this salad really popped.

Ingredients:

1-2 zucchini sliced in half lengthwise

24 ounces top sirloin

1-2 Roma tomatoes quartered

1 red onion quartered

1 -2 bell peppers roughly sliced

1 bag greens or watercress

Spice Mix-

1 tablespoon salt

2 teaspoons black pepper

2 teaspoons garlic powder

2 teaspoons lemon pepper seasoning

1 teaspoon fennel seeds

1 teaspoon ground thyme

4 tablespoons vegetable oil

Blue Cheese Sauce-

½ cup nonfat plain Greek yogurt

2 tablespoons lemon juice

2 ounces blue cheese

1 tablespoon buffalo sauce or hot sauce

Directions:

  1. Prepare spice mix and pour/rub onto steak and vegetables.  Allow to marinate for at least an hour or even overnight in the fridge.  Remove from the refrigerator 20 minutes before grilling.
  2. Preheat grill to high heat.
  3. Cook steak 5-7 minutes per side then allow to rest while you grill the vegetables.  Grill vegetables 3-5 minutes per side.
  4. Mix yogurt, lemon juice, blue cheese, and buffalo sauce in a small bowl.  Add milk to thin if desired.
  5. Serve the grilled steak and vegetables over a bed of greens.  Drizzle the dressing on top.
  6. Enjoy!

Tuscan Roasted Lemon Potatoes

I could eat roasted potatoes almost every day and this recipe is exceptionally delicious. 

Ingredients:

2 pounds gold potatoes unpeeled and diced into 1-inch pieces

4 cloves garlic smashed

2-4 branches fresh rosemary

½ lemon cut in half through the stem and thinly sliced crosswise

3 tablespoons olive oil

Salt and pepper to taste

Directions:

  1. Preheat the oven to 375 degrees. Line a baking sheet with aluminum foil.
  2. Toss potatoes in a large bowl with olive oil, garlic, lemon juice, salt, and pepper. 
  3. Spread potatoes out in an even layer on the baking sheet with rosemary branches.  
  4. Roast for 50-60 minutes turning the potatoes every 20 minutes.
  5. Discard the rosemary branches and serve.

<strong>Grilled Steak with Mango Chimichurri</strong>

Grilled Steak with Mango Chimichurri

Wow! This was so delicious I practically licked my plate clean.  The mango chimichurri is so good you will want to eat it by the spoonful and a nice grilled steak always makes me smile.  I used New York strips, but you can use any cut of steak you like. The herbs I used came fresh from my garden, but you can buy them if you don’t have any growing on hand.

Ingredients:

Steak-

4 New York strip steaks

Olive oil

Salt and pepper

Mango Chimichurri-

1 cup fresh parsley leaves

1 cup fresh cilantro leaves

½ cup fresh mint leaves

2 garlic cloves minced

¼ cup red wine vinegar

2 tablespoons honey

1 teaspoon paprika

½ – ¾ cup olive oil

1 mango diced

Directions:

  1. Remove steak from refrigerator at least 20 minutes prior to grilling.
  2. Rub steaks with olive oil on both sides.  Salt and pepper to taste.
  3. Preheat grill to high heat.
  4. Add parsley, cilantro, mint, garlic, red wine vinegar, ½ cup olive oil, honey, and paprika to a food processor.  Pulse to mix.  Add more olive oil if needed.
  5. Transfer to a medium bowl and fold in diced mango.
  6. Grill steaks for 3-5 minutes per side.  Let steaks rest for 5 minutes before serving.
  7. Top steaks with mango chimichurri. 
  8. Enjoy!
