The steak and veggies in this recipe were coated with flavor from the marinade and when topped with the blue cheese dressing this salad really popped.
Ingredients:
1-2 zucchini sliced in half lengthwise
24 ounces top sirloin
1-2 Roma tomatoes quartered
1 red onion quartered
1 -2 bell peppers roughly sliced
1 bag greens or watercress
Spice Mix-
1 tablespoon salt
2 teaspoons black pepper
2 teaspoons garlic powder
2 teaspoons lemon pepper seasoning
1 teaspoon fennel seeds
1 teaspoon ground thyme
4 tablespoons vegetable oil
Blue Cheese Sauce-
½ cup nonfat plain Greek yogurt
2 tablespoons lemon juice
2 ounces blue cheese
1 tablespoon buffalo sauce or hot sauce
Directions:
- Prepare spice mix and pour/rub onto steak and vegetables. Allow to marinate for at least an hour or even overnight in the fridge. Remove from the refrigerator 20 minutes before grilling.
- Preheat grill to high heat.
- Cook steak 5-7 minutes per side then allow to rest while you grill the vegetables. Grill vegetables 3-5 minutes per side.
- Mix yogurt, lemon juice, blue cheese, and buffalo sauce in a small bowl. Add milk to thin if desired.
- Serve the grilled steak and vegetables over a bed of greens. Drizzle the dressing on top.
