Barbecue Lasagna
What’s better than lasagna? How about a lasagna with a BBQ flair with a barbecue sauce based sauce and melted cheddar cheese.
Ingredients:
1 pound lean ground beef
1 bell pepper diced
½ onion diced
1 cup barbecue sauce
1 cup beef broth
½ cup plain nonfat Greek yogurt
6 no boil lasagna noodles
2 cups cheddar cheese shredded
1 tablespoon steak seasoning
Directions:
- Whisk together beef broth, barbecue sauce, and Greek yogurt. Pour a layer of the sauce in the base of a 9×13 dish.
- Brown the ground beef breaking it up and drain the fat. Add the steak seasoning after draining the fat.
- Meanwhile saute the peppers and onion over medium heat until soft.
- Lay 3 noodles over the sauce in the base of the pan.
- Spread out the beef over the noodles and top with the peppers and onion mixture.
- Sprinkle half of the shredded cheese over the onion mixture.
- Add another layer of noodles. Pour the remaining sauce over the noodles.
- Sprinkle the remaining cheese over the noodles.
- Cover with aluminum foil.
- Bake at 350 degrees. If cooking immediately bake for 30 minutes before removing foil. If baking after refrigerating bake for 45 minutes.
- Remove foil and bake for an additional ten minutes.
- Allow to rest for five minutes before serving.
- I served this over air fried zucchini noodles to lighten it up and add some veggies to the meal.
