Barbecue Lasagna

Barbecue Lasagna

What’s better than lasagna?  How about a lasagna with a BBQ flair with a barbecue sauce based sauce and melted cheddar cheese.  

Ingredients:

1 pound lean ground beef

1 bell pepper diced

½ onion diced

1 cup barbecue sauce

1 cup beef broth

½ cup plain nonfat Greek yogurt

6 no boil lasagna noodles

2 cups cheddar cheese shredded

1 tablespoon steak seasoning

Directions:

  1. Whisk together beef broth, barbecue sauce, and Greek yogurt.  Pour a layer of the sauce in the base of a 9×13 dish. 
  2. Brown the ground beef breaking it up and drain the fat.  Add the steak seasoning after draining the fat. 
  3. Meanwhile saute the peppers and onion over medium heat until soft. 
  4. Lay 3 noodles over the sauce in the base of the pan. 
  5. Spread out the beef over the noodles and top with the peppers and onion mixture. 
  6. Sprinkle half of the shredded cheese over the onion mixture. 
  7. Add another layer of noodles.  Pour the remaining sauce over the noodles.  
  8. Sprinkle the remaining cheese over the noodles. 
  9. Cover with aluminum foil.  
  10. Bake at 350 degrees.  If cooking immediately bake for 30 minutes before removing foil.  If baking after refrigerating bake for 45 minutes.  
  11. Remove foil and bake for an additional ten minutes. 
  12. Allow to rest for five minutes before serving. 
  13. I served this over air fried zucchini noodles to lighten it up and add some veggies to the meal.
