Berry cobbler is a perfect way to use up summer fruits.  I used blueberries, strawberries, and blackberries, but you can use any fruits you have a craving for. This is nice when you are entertaining because you can prep and then let it cook in the crock pot until you are ready to serve. 

Berry Filling-

¼ cup cornstarch

2 tablespoons lemon juice

5 1/2 cups fruit (blueberries, strawberries, blackberries, etc…)

½ cup granulated sugar

Biscuit Topping-

1 ¼ cups all purpose flour

3 tablespoons granulated sugar

1 teaspoon baking powder

Pinch salt

4 tablespoons cold unsalted butter cut into small pieces

 ¾ cup milk

1 teaspoon ground cinnamon

Directions:

  1. Whisk the cornstarch, lemon juice, and 2 tablespoons of water in a small bowl. 
  2. Spray the crock pot with nonstick butter spray.  Then spread out the fruit.
  3. Pour the cornstarch mixture over the fruit and mix to combine.
  4. For the biscuit topping whisk the flour, 2 tablespoons granulated sugar, baking powder, and salt in a large bowl.  Add the butter and mix until the mixture forms a coarse meal with pea sized lumps.  Add the milk and stir to form a wet dough.
  5. Drop spoonful’s of the dough on the berry mixture.  Combine the remaining 1 tablespoon of granulated sugar and cinnamon and sprinkle over the dough.
  6. Cook on low 3-4 hours. Reduce heat to warm 20 minutes prior to serving.
  7. Top with vanilla ice cream or whipped cream.
  8. Enjoy!
