Triple Citrus Glazed Salmon
I think this may be my favorite salmon recipe! OMG the glaze is so delicious. This salmon was better than any salmon I have ever made at home or had at a restaurant.
Ingredients:
Triple Citrus Glaze-
¾ cup orange juice
¼ cup fresh lemon juice
¼ cup fresh lime juice
1 garlic clove minced
2 tablespoons orange marmalade
2 tablespoons soy sauce
2 tablespoons light brown sugar
1 tablespoon rice wine vinegar
1 tablespoon butter
Salmon-
2-pound salmon filet
1-2 tablespoons olive oil (I used a blood orange olive oil)
Directions:
- Preheat oven to 375 degrees and line a 9×13 baking dish with aluminum foil.
- Place salmon skin side down on the aluminum foil and drizzle olive oil over the salmon.
- Bake for 40 minutes while you prepare the glaze.
- Add all ingredients to a small saucepan. Bring to a boil stirring often. Reduce the heat to medium and continue to stir until the glaze is thick and syrupy.
- Spread a layer of glaze on the salmon and bake for 5 more minutes.
- Drizzle extra glaze over the salmon and enjoy!
- Note: I paired this with a nectarine coleslaw for a light and delicious dinner.
