French Onion Meatloaf
Meatloafs have become one of my favorite prep ahead of time dinner staples. To keep things interesting I am always trying different flavor profiles. This meatloaf is packed with flavor and topped with crunchy fried onions.
Ingredients:
1 pound lean ground beef
½ onion diced
2 garlic cloves minced
1 bell pepper diced
1 package onion soup mix
1 tablespoon worcestershire sauce
1 cup old fashioned oats
½ cup shredded parmesan cheese
1 cup shredded cheese (I used a cheddar blend)
1 egg beaten
Crunchy fried onions
Directions:
- Saute onions and pepper over medium heat until soft. Add garlic and saute for an additional minute.
- Add ground beef, onion mixture, soup mixture, worcestershire sauce, parmesan cheese, and oats to a large bowl. Gently mash together.
- Add the egg mixture and mix it in.
- Press the mixture into the base of a bread pan.
- Top with shredded cheese.
- Cover with aluminum foil and bake for 50 minutes at 350 degrees.
- Remove aluminum foil and top with fried onions. Bake for an additional ten minutes.
- Allow meat to cool for 5 minutes before slicing.
