Pumpkin Spice Chip Cookies
These cookies are similar to chocolate chip cookies, but instead of chocolate chips they feature pumpkin spice chips with a touch of pumpkin spice seasoning. These are the perfect fall cookie!
Ingredients:
2 sticks unsalted butter at room temperature
3 cups all purpose flour
½ cup vanilla protein powder
1 teaspoon salt
1 teaspoon baking powder
½ teaspoon baking soda
2 teaspoons pumpkin pie spice
2 eggs at room temperature
1 tablespoon vanilla extract
1 bag pumpkin pie spice chips
1 cup brown sugar
½ cup granulated sugar
Directions:
- Preheat oven to 375 and line two baking sheets with parchment paper.
- Beat butter and sugars in a large bowl on medium speed until light and fluffy.
- Whisk together flour, protein powder, baking soda, baking powder, salt, and pumpkin spice in a large bowl.
- Add the eggs and vanilla extract and mix on low speed until well combined.
- Gradually add dry ingredients one cup at a time scraping down the bowl as needed.
- Add the pumpkin spice chips and mix in to combine.
- Use a medium cookie scoop to form balls. Space balls 2 inches apart on the baking sheet.
- Bake for 9 minutes or until cookies are just beginning to brown.
- Let cookies cool on the baking sheet for 5 minutes before transferring to a cooling rack to cool completely.
- Store in an airtight container.
