Pumpkin Spice Chip Cookies

Pumpkin Spice Chip Cookies

These cookies are similar to chocolate chip cookies, but instead of chocolate chips they feature pumpkin spice chips with a touch of pumpkin spice seasoning.  These are the perfect fall cookie!

Ingredients:

2 sticks unsalted butter at room temperature

3 cups all purpose flour

½ cup vanilla protein powder

1 teaspoon salt

1 teaspoon baking powder

½ teaspoon baking soda

2 teaspoons pumpkin pie spice

2 eggs at room temperature

1 tablespoon vanilla extract

1 bag pumpkin pie spice chips

1 cup brown sugar

½ cup granulated sugar

Directions:

  1. Preheat oven to 375 and line two baking sheets with parchment paper. 
  2. Beat butter and sugars in a large bowl on medium speed until light and fluffy.
  3. Whisk together flour, protein powder, baking soda, baking powder, salt, and pumpkin spice in a large bowl. 
  4. Add the eggs and vanilla extract and mix on low speed until well combined. 
  5. Gradually add dry ingredients one cup at a time scraping down the bowl as needed. 
  6. Add the pumpkin spice chips and mix in to combine. 
  7. Use a medium cookie scoop to form balls.  Space balls 2 inches apart on the baking sheet. 
  8. Bake for 9 minutes or until cookies are just beginning to brown. 
  9. Let cookies cool on the baking sheet for 5 minutes before transferring to a cooling rack to cool completely. 
  10. Store in an airtight container. 
  11. Enjoy!!
