I’m not going to lie I love grilled steak and vegetables.  These wraps were delicious and a meal I will make again.  The marinade/spice mixture on the steak was divine.

Ingredients:

Marinade-

1/3 cup extra virgin olive oil

3 cloves garlic minced

1 teaspoon dried oregano

1 teaspoon paprika

Yogurt Sauce-

½ cup plain nonfat Greek yogurt

2 tablespoons marinade mixture from above

Wraps-

Whole wheat tortillas

1 pound skirt steak

1 green pepper sliced

1 sweet onion sliced into rounds

1 large tomato chopped

1 bunch watercress

Directions:

  1. Mix the marinade ingredients in a small bowl.  Transfer 2 tablespoons to a bowl to add to yogurt for sauce. Spread marinade over skirt steak, peppers, and onion. Let marinate for at least 30 minutes or overnight in the refrigerator.
  2. Add 2 tablespoons water to yogurt and marinade to make a sauce.  Refrigerate until ready to serve.
  3. Preheat grill to high heat. Grill the skirt steak on both sides for 5-10 minutes per side.  Let the steak rest while you grill the vegetables for 2-5 minutes per side.
  4. Slice the skirt steak while vegetables finish grilling.
  5. To serve layer watercress, tomato, steak, vegetables, and sauce over a burrito.  You can also eat this in a bowl as a salad.
  6. Note: I added buffalo sauce to add a little spice when I ate this as a salad.
