Spicy Veggie Omelet

I love veggie loaded omelets. I was in the mood for some spice and wanted an omelet that would taste great with salsa.

Ingredients:

3 large eggs

1/4 cup cherry tomatoes cut in half

1/4 cup bell peppers diced

1/4 cup spinach

1/8 cup onion diced

1/4 cup shredded Pepperjack cheese

1 teaspoon fresh cilantro

1/2 teaspoon chipotle lime seasoning (or similar spice)

salsa, avocado, plain nonfat Greek yogurt to top

Directions:

  1. Preheat omelet maker.
  2. Mix eggs, veggies, spice, and cheese in a bowl.
  3. Pour into omelet maker diving veggies evenly between two halves.
  4. Remove once cooked.
  5. Top with salsa, avocado, plain nonfat Greek yogurt….

Cinnamon Roll Cookies

Cinnamon Roll Cookies

Do you love cinnamon rolls? How about a cinnamon roll sugar cookie with a maple icing? These are fantastic. Mine turned out much bigger than I anticipated so be sure to leave space on your baking sheet.

Recipe adapted from Food Network

Ingredients:

Cookie Dough-

2 sticks unsalted butter softened

1 cup granulated sugar

1/2 cup packed light brown sugar

1 tablespoon vanilla extract

1 large egg room temperature

2 1/2 cups all purpose flour (plus some for dusting)

2 teaspoons baking powder

1 teaspoon grated nutmeg

1 teaspoon salt

Filling:

2 tablespoons butter melted

1 tablespoon (or more) ground cinnamon

1/4 cup granulated sugar

Glaze:

2 cups powdered sugar

2-4 tablespoons milk

2 tablespoons melted butter

1 teaspoon maple extract

Directions:

Cookie Dough

  1. Cream the butter and sugars until light and fluffy (3 to 4 minutes).
  2. Add the vanilla and egg. Scrape down the sides periodically while mixing.
  3. In a large bowl mix the flour, nutmeg, and baking powder.
  4. Add the dry ingredients 1 cup at a time.
  5. Cover and chill dough for 15-20 minutes.
  6. Flour a surface. Roll dough out into a 16×8 inch rectangle 1/4 inch thick.

Filling

  1. Melt the butter for 30 seconds. Pour the butter over the dough and spread.
  2. Sprinkle the sugar over the dough.
  3. Sprinkle cinnamon all over the dough.
  4. Roll the dough tightly just as you would with cinnamon rolls. Pinch the seam when you reach the end.
  5. Wrap the dough in plastic wrap and place on a cookie sheet. Refrigerate for at least an hour.
  6. Preheat the oven to 350 degrees. Line two baking sheets with parchment paper.
  7. Unwrap the dough and transfer to a cutting board.
  8. With a sharp knife cut the dough into 1/2 inch thick slices.
  9. Transfer the slices to a baking sheet. Sprinkle with a little more cinnamon. Be sure to leave room between cookies. They grow while baking.
  10. Bake 12-14 minutes until edges are starting to brown.
  11. Remove the parchment paper from the baking sheet to cool.

Glaze

  1. Melt the butter for 30-60 seconds. Stir in the powdered sugar and extract. Add milk until glaze reaches desired consistency.
  2. Drizzle the glaze over the cookies.
  3. Enjoy cookies warm or let them cool.
  4. Place parchment paper between layers of cookies if storing in an air tight container.

Eggplant Fries

Eggplant Fries

I love experimenting with different types of baked vegetable fries. The breadcrumbs are loaded with spices and toasted in this recipe to really make the flavors pop. I was out of plain Greek yogurt, so I used a carrot hummus as a dipping sauce instead of the suggested tzatziki. Feel free to dip your fries in the sauce/dressing of your choice.

Ingredients:

1 eggplant peeled and sliced into 1/2 inch thick fries

1 cup panko bread crumbs

1/2 teaspoon smoked paprika

1/2 teaspoon chili powder

1/4 teaspoon ground cumin

1/4 teaspoon ground coriander

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1/2 teaspoon oregano

1/4 cup all purpose flour

2 eggs beaten

1/2 teaspoon sea salt

1/2 teaspoon ground black pepper

Directions:

  1. Preheat oven to 425 degrees.
  2. Combine bread crumbs, paprika, chili powder, onion powder, garlic powder, and oregano in a nonstick skillet. Toast on medium heat for 3-5 minutes mixing constantly until mixture is golden brown.
  3. Line a baking sheet with aluminum foil and spray with nonstick spray.
  4. Dip each eggplant fry in flour. Then coat in egg. Then toss in bread crumb mixture. Place on baking sheet leaving a space between fries.
  5. Bake 14-16 minutes.
  6. Serve with tzatziki sauce, carrot hummus (see recipe in snacks), or even ranch dressing.
