Do you love cinnamon rolls? How about a cinnamon roll sugar cookie with a maple icing? These are fantastic. Mine turned out much bigger than I anticipated so be sure to leave space on your baking sheet.
Recipe adapted from Food Network
Ingredients:
Cookie Dough-
2 sticks unsalted butter softened
1 cup granulated sugar
1/2 cup packed light brown sugar
1 tablespoon vanilla extract
1 large egg room temperature
2 1/2 cups all purpose flour (plus some for dusting)
2 teaspoons baking powder
1 teaspoon grated nutmeg
1 teaspoon salt
Filling:
2 tablespoons butter melted
1 tablespoon (or more) ground cinnamon
1/4 cup granulated sugar
Glaze:
2 cups powdered sugar
2-4 tablespoons milk
2 tablespoons melted butter
1 teaspoon maple extract
Directions:
Cookie Dough
- Cream the butter and sugars until light and fluffy (3 to 4 minutes).
- Add the vanilla and egg. Scrape down the sides periodically while mixing.
- In a large bowl mix the flour, nutmeg, and baking powder.
- Add the dry ingredients 1 cup at a time.
- Cover and chill dough for 15-20 minutes.
- Flour a surface. Roll dough out into a 16×8 inch rectangle 1/4 inch thick.
Filling
- Melt the butter for 30 seconds. Pour the butter over the dough and spread.
- Sprinkle the sugar over the dough.
- Sprinkle cinnamon all over the dough.
- Roll the dough tightly just as you would with cinnamon rolls. Pinch the seam when you reach the end.
- Wrap the dough in plastic wrap and place on a cookie sheet. Refrigerate for at least an hour.
- Preheat the oven to 350 degrees. Line two baking sheets with parchment paper.
- Unwrap the dough and transfer to a cutting board.
- With a sharp knife cut the dough into 1/2 inch thick slices.
- Transfer the slices to a baking sheet. Sprinkle with a little more cinnamon. Be sure to leave room between cookies. They grow while baking.
- Bake 12-14 minutes until edges are starting to brown.
- Remove the parchment paper from the baking sheet to cool.
Glaze
- Melt the butter for 30-60 seconds. Stir in the powdered sugar and extract. Add milk until glaze reaches desired consistency.
- Drizzle the glaze over the cookies.
- Enjoy cookies warm or let them cool.
- Place parchment paper between layers of cookies if storing in an air tight container.
