Cinnamon Roll Cookies

Do you love cinnamon rolls? How about a cinnamon roll sugar cookie with a maple icing? These are fantastic. Mine turned out much bigger than I anticipated so be sure to leave space on your baking sheet.

Ingredients:

Cookie Dough-

2 sticks unsalted butter softened

1 cup granulated sugar

1/2 cup packed light brown sugar

1 tablespoon vanilla extract

1 large egg room temperature

2 1/2 cups all purpose flour (plus some for dusting)

2 teaspoons baking powder

1 teaspoon grated nutmeg

1 teaspoon salt

Filling:

2 tablespoons butter melted

1 tablespoon (or more) ground cinnamon

1/4 cup granulated sugar

Glaze:

2 cups powdered sugar

2-4 tablespoons milk

2 tablespoons melted butter

1 teaspoon maple extract

Directions:

Cookie Dough

  1. Cream the butter and sugars until light and fluffy (3 to 4 minutes).
  2. Add the vanilla and egg. Scrape down the sides periodically while mixing.
  3. In a large bowl mix the flour, nutmeg, and baking powder.
  4. Add the dry ingredients 1 cup at a time.
  5. Cover and chill dough for 15-20 minutes.
  6. Flour a surface. Roll dough out into a 16×8 inch rectangle 1/4 inch thick.

Filling

  1. Melt the butter for 30 seconds. Pour the butter over the dough and spread.
  2. Sprinkle the sugar over the dough.
  3. Sprinkle cinnamon all over the dough.
  4. Roll the dough tightly just as you would with cinnamon rolls. Pinch the seam when you reach the end.
  5. Wrap the dough in plastic wrap and place on a cookie sheet. Refrigerate for at least an hour.
  6. Preheat the oven to 350 degrees. Line two baking sheets with parchment paper.
  7. Unwrap the dough and transfer to a cutting board.
  8. With a sharp knife cut the dough into 1/2 inch thick slices.
  9. Transfer the slices to a baking sheet. Sprinkle with a little more cinnamon. Be sure to leave room between cookies. They grow while baking.
  10. Bake 12-14 minutes until edges are starting to brown.
  11. Remove the parchment paper from the baking sheet to cool.

Glaze

  1. Melt the butter for 30-60 seconds. Stir in the powdered sugar and extract. Add milk until glaze reaches desired consistency.
  2. Drizzle the glaze over the cookies.
  3. Enjoy cookies warm or let them cool.
  4. Place parchment paper between layers of cookies if storing in an air tight container.
