Grilled Tilapia Sandwiches with Tropical Salad and Sautéed Honey Plantains

While I wouldn’t recommend making this dinner after spending the day outside in 95 degree temperatures running around a Cub Scout camp like I did, I would recommend you try this dinner when you are in a tropical mood.

Recipes adapted from Food Network

Ingredients:

Grilled Tilapia Sandwiches-

2 pounds tilapia filets

2 teaspoons garlic powder

2 teaspoons paprika

2 tablespoons olive oil

Pickled Red Onions-

½ red onion thinly sliced

½ tablespoon pickling spice

½ cup white vinegar

½ tablespoon salt

½ tablespoon sugar

Garlic Aioli-

½ cup nonfat plain Greek yogurt

1 tablespoon lemon juice

½ teaspoon garlic powder

Serve on a bun or bibb lettuce wrap

Tropical Salad-

1 5 ounce bag watercress

1 chayote peeled, boiled, and cut into cubes

½ ripe papaya cut into chunks

1 avocado sliced

1/4 cup diced red onion

Tropical Dressing-

2 tablespoons shallots

3 tablespoons lime juice, zest of 1 lime

2 tablespoons orange juice

4 tablespoons sherry vinegar

¼ cup olive oil

1 teaspoon nutmeg

Honey Plantains-

1 ripe plantain sliced

1 tablespoon blood orange olive oil (or extra virgin olive oil)

1 tablespoon lime juice

1 tablespoon honey

Directions:

Grilled Tilapia-

  1. Thaw fish 24 hours prior if using from frozen. 
  2. Spread out fish in a 9×13 dish. 
  3. Drizzle with olive oil.
  4. Sprinkle garlic powder and paprika over fish.
  5. Grill fish 2-3 minutes per side.

Pickled Red Onions-

  1. Add sliced onions, vinegar, sugar, and pickling spice to a small dish. 
  2. Cover and let sit until ready to serve.

Garlic Aioli-

  1. Add yogurt, garlic powder, lemon juice to a medium bowl.
  2. Mix to combine.
  3. Cover and refrigerate until ready to serve.

Tilapia Sandwiches-

  1. Spread garlic aioli on bun or lettuce.
  2. Add grilled fish.
  3. Top with pickled onions.
  4. Serve with tropical salad and honey plantains.

Tropical Salad-

  1. Peel and chop the chayote into cubes.  Boil for 5-10 minutes.
  2. Add papaya, chayote, watercress, red onion, and avocado to a large bowl.  Mix gently to combine.
  3. Add tropical dressing ingredients to a food processor.  Pulse to mix. 
  4. Transfer dressing to a bowl until ready to serve. 
  5. Add the dressing.  Mix to distribute dressing.

Honey Plantains-

  1. Add sliced plantains, olive oil, lime juice, and honey to a nonstick skillet.
  2. Sauté over medium heat tossing frequently until plantains are soft.

Spicy Pasta Salad

In the past I only made pasta salad using Italian dressing; however, recently I have begun experimenting with different sauces and vinaigrettes.  This pasta salad is loaded with veggies as usual but also has a little kick of spice.

Recipe adapted from Food Network

Ingredients:

8 ounce box chickpea rotini pasta

1 zucchini sliced and quartered

1 bell pepper diced

½ cup cherry tomatoes halved

½ cup nonfat plain Greek yogurt

1/3 cup white vinegar (more if needed)

1 teaspoon adobo sauce

1 chipotle pepper in adobo sauce

1 tablespoon honey

½ pound smoked chipotle gouda cheese cut into cubes

12 basil leaves sliced

Directions:

  1. Bring a large pot of salted water to boil.  Cook pasta to al dente according to package directions.  Drain and rinse with cold water.
  2. Add diced vegetables to a large bowl.
  3. Add yogurt, vinegar, adobo sauce, chipotle pepper, and honey to a food processor.  Pulse to chop pepper and mix sauce.
  4. Add pasta to vegetables. 
  5. Pour the sauce over the vegetables and mix to evenly distribute the dressing.
  6. Sprinkle basil leaves over the salad.  Toss to mix.
  7. Add chopped cheese.
  8. Refrigerate until ready to serve. Mix well to redistribute dressing before serving.

My family always wonders why I prefer my homemade patties to store bought ones, but after tasting these I think they have changed their minds.  These burgers are mixed with sauteed vegetables, steak seasoning, and both filled and topped with 2 different types of cheddar

Banana Papaya Peanut Butter Muffins

Bananas and papayas mashed add natural sweetness to these muffins.  Then I topped them with a few slices of fresh banana for an added yum to every bite.

Ingredients:

1 cup whole wheat flour

1 cup almond flour

1 scoop vanilla protein powder

3 tablespoons powdered peanut butter

¼ teaspoon baking powder

1 teaspoon baking soda

½ teaspoon salt

1 teaspoon ground cinnamon

½ teaspoon ground allspice

½ teaspoon ground ginger

3 mashed bananas (lumps are okay)

1 sliced banana

1 cup mashed papaya

2 large eggs

Directions:

  1. Preheat the oven to 350 degrees.  Spray muffin tins with baking spray or line with liners. 
  2. Add flours, protein powder, peanut butter powder, baking soda, baking powder, salt, cinnamon, allspice, and ginger to a bowl.  Mix to combine.
  3. Add beaten eggs.  Mix gently.
  4. Add mashed bananas and papayas. Mix gently.
  5. Use a large cookie scooper to fill muffin tins.
  6. Gently press 2-3 banana slices on the top of each muffin.
  7. Bake 25 minutes.
  8. Let cool for at least 10 minutes on a wire rack before removing from the pan.
  9. Store in an air-tight container.  I store these in the fridge after 2 days.  I also freeze extra muffins to enjoy later.
