Banana Papaya Peanut Butter Muffins
Bananas and papayas mashed add natural sweetness to these muffins. Then I topped them with a few slices of fresh banana for an added yum to every bite.
Ingredients:
1 cup whole wheat flour
1 cup almond flour
1 scoop vanilla protein powder
3 tablespoons powdered peanut butter
¼ teaspoon baking powder
1 teaspoon baking soda
½ teaspoon salt
1 teaspoon ground cinnamon
½ teaspoon ground allspice
½ teaspoon ground ginger
3 mashed bananas (lumps are okay)
1 sliced banana
1 cup mashed papaya
2 large eggs
Directions:
- Preheat the oven to 350 degrees. Spray muffin tins with baking spray or line with liners.
- Add flours, protein powder, peanut butter powder, baking soda, baking powder, salt, cinnamon, allspice, and ginger to a bowl. Mix to combine.
- Add beaten eggs. Mix gently.
- Add mashed bananas and papayas. Mix gently.
- Use a large cookie scooper to fill muffin tins.
- Gently press 2-3 banana slices on the top of each muffin.
- Bake 25 minutes.
- Let cool for at least 10 minutes on a wire rack before removing from the pan.
- Store in an air-tight container. I store these in the fridge after 2 days. I also freeze extra muffins to enjoy later.
