Nacho Chicken Drumsticks
The coating on these chicken drumsticks is crunchy, cheesy, and just tasty. I served this with zachos (zucchini nachos) and a corn salad.
Ingredients:
6-7 chicken drumsticks
2 cups tortilla chips crushed
2 tablespoons taco seasoning divided
½ cup flour
2 large eggs
½ cup shredded cheddar cheese divided
½ cup shredded Monterrey Jack cheese (or taco seasoned cheese)
Salsa, guacamole, etc..
Directions:
- Place chicken drumsticks in a zip lock bag. Add flour and taco seasoning. Shake to coat the chicken with the flour mixture.
- Dredge chicken in the egg mixture. Rub over the chicken to wet it.
- Add crushed tortilla chips and ¼ cup each cheese to a small container. Sprinkle the crumb mixture over the chicken.
- Air fry the chicken at 400 degrees for 10-12 minutes.
- Transfer the chicken to a baking sheet lined with aluminum foil and sprayed with olive oil spray.
- Place the chicken close together and sprinkle with the some of the remaining cheese.
- Broil on high for 5 minutes.
- Remove from the oven. Sprinkle with more cheese to it can melt on the warm chicken.
- Serve with salsa and guacamole.
