Nacho Chicken Drumsticks

Nacho Chicken Drumsticks

The coating on these chicken drumsticks is crunchy, cheesy, and just tasty.  I served this with zachos (zucchini nachos) and a corn salad. 

Ingredients:

6-7 chicken drumsticks

2 cups tortilla chips crushed

2 tablespoons taco seasoning divided

½ cup flour

2 large eggs

½ cup shredded cheddar cheese divided

½ cup shredded Monterrey Jack cheese (or taco seasoned cheese)

Salsa, guacamole, etc..

Directions:

  1. Place chicken drumsticks in a zip lock bag.  Add flour and taco seasoning.  Shake to coat the chicken with the flour mixture.
  2. Dredge chicken in the egg mixture.  Rub over the chicken to wet it.
  3. Add crushed tortilla chips and ¼ cup each cheese to a small container.  Sprinkle the crumb mixture over the chicken.
  4. Air fry the chicken at 400 degrees for 10-12 minutes. 
  5. Transfer the chicken to a baking sheet lined with aluminum foil and sprayed with olive oil spray.
  6. Place the chicken close together and sprinkle with the some of the remaining cheese.
  7. Broil on high for 5 minutes.
  8. Remove from the oven.  Sprinkle with more cheese to it can melt on the warm chicken.
  9. Serve with salsa and guacamole.
  10. Enjoy!
